Coffee Mousse With Praline, Fish Tikka Shashlik And Mexican Chicken With Fried Rice

Ingredients for Fish Tikka Shashlik:

  • Boneless fish 1/2 kg
  • Onion 2 (diced)
  • Tomato 2 (diced)
  • Capsicum 2 (diced)

Ingredients for Marination:

  • Ginger garlic paste 1 tbsp
  • Chilli Powder 1 tsp
  • Cumin powder 1 tsp
  • Salt 1 1/2 tsp
  • Oil 1/4 cup
  • Curd 2 tbsp
  • Vinegar 1 tbsp
  • Corn flour 1 tbsp
  • Cream 2 tbsp
  • Orange Color 1 pinch

Ingredients for Topping:

  • Chat masala 1/2 tsp
  • Coriander leaves few

Method:

  1. Marinate the fish with ginger garlic paste, chilli powder, cumin powder, salt, curd, vinegar, corn flour, cream and orange color. Leave aside for 10 minutes.
  2. Arrange fish with vegetables on skewers and grill in pan for 10 minutes in oil.
  3. Sprinkle chat masala on top and garnish with coriander leaves.

Ingredients for Coffee Mousse with Praline:

  • Eggs 2 separated
  • Gelatin powder 1 1/2 tsp
  • Coffee 1 tsp
  • Caster Sugar 6 tbsp
  • Fresh cream 200 grams

Ingredients for Praline:

  • Sugar 8 tbsp
  • Walnuts 1/4 cup

Method:

  1. Dissolve gelatin in 1/4 cup water and stir in the dissolved coffee.
  2. In a separate bowl, beat together the egg yolks & sugar till thick and creamy.
  3. Whisk in the gelatin and coffee mixture.
  4. In a separate bowl, beat the egg whites until frothy.
  5. Beat cream till thick and fold in the coffee mixture.
  6. Lastly, fold in the whites in the coffee mixture. Transfer the mousse into a mold & chill till firm.
  7. Remove and decorate with swirls of fresh cream and cover with praline.

Ingredients for Mexican Chicken with Fried Rice:

  • Chicken 1 kg
  • Onion 1
  • Capsicum 1
  • Garlic Paste 2 tsp
  • Salt 1 tsp
  • Oil 1/4 cup
  • Paprika 1 tsp
  • Oregano leaves 1/2 tsp
  • Ketchup 3 tbsp
  • Whit sauce 1 cup
  • Water 1 cup

Ingredients for Fried Rice:

  • Rice boiled 2 cups
  • Carrot 3 tbsp
  • Spring onion 3 tbsp
  • Garlic 1 tsp
  • White pepper 1/4 tsp
  • Soya sauce 1 tbsp
  • Salt 1/2 tsp
  • Oil 1/4 cup

Ingredients for White Sauce:

  • Mustard 1/2 tsp
  • Pepper 1/2 tsp
  • Salt 1/2 tsp
  • Butter 2 tbsp
  • Flour 3 tbsp
  • Milk 3/4 cup
  • Water 1/2 cup

Method:

  1. Heat oil, add garlic paste. fry it for 2 minutes. Then add chicken pieces and fry it for 5 minutes.
  2. Now add salt, paprika and water and cook it for 15 minutes.
  3. Mix together the oregano, 1 cup white sauce and ketchup.
  4. Lastly, add together chopped onion and chopped capsicum, simmer it and serve it with fried rice.
  1. For fried rice, heat oil, add together garlic fry and boiled rice.
  2. Now mix together carrot, chopped spring onions. soya sauce and salt.
  1. For white sauce, fry together butter and flour and remove from stove.
  2. Now mix together mustard, pepper, salt, milk and water and cook it again until it becomes thick.
  3. Serve it with tomato, salad leaves and rice.
