Chicken Bihari Rolls, BBQ Chicken Green Boti And Shahi Tukray by Shireen Anwer

Ingredients for Chicken Bihari Roll:

  • Chicken 250 gram
  • Papaya 1 tsp
  • Chilli powder 1 tsp
  • All spice 1/2 tsp
  • Salt 1 tsp
  • Turmeric 1 pinch
  • Roasted and crushed cumin 1 tsp
  • Ginger garlic 1 tsp
  • Yogurt 2 tbsp

For Chutney:

  • Tamarind pulp 1/4 cup
  • Coriander leaves 2 tbsp
  • Green chillies 2
  • Mint leaves 8
  • Cumin 1 tsp
  • Garlic 1/2 tsp
  • Yogurt 2 tbsp

For Paratha:

  • Flour 2 cups
  • White flour 1 cup
  • Salt 1/2 tsp
  • Sugar 1 tbsp
  • Oil 1/4 cup
  • Water to knead
  • Ghee for filling and frying

Method:

  1. Marinate chicken fillet for one hour with papaya, chilli powder, all spice, turmeric, roasted and crushed cumin, ginger garlic, yogurt.
  2. Pan fry in oil, give smoke of coal.
  3. For chutney, blend together the tamarind pulp, coriander leaves, green chillies, mint leaves, cumin garlic and yogurt in a blender.
  4. For paratha, in a bowl mix together the flour, white flour, salt, sugar and lukewarm water as required. Knead to form smooth dough. Divide dough into equal portions and shape into round balls. Roll out each ball of dough into a disc. Heat oil in a griddle and fry the parathas.
  5. To assemble paratha, take prepared paratha, spread the chicken bihari. Top with onion rings, mint leaves, some chutney and roll tightly re-roll in butter paper and serve immediately.

Ingredients for Shahi Tukry:

  • Thick bread slices 8 remove the crust
  • Milk 2 1/2 cup
  • Sugar 2 cups
  • Yellow color 1 pinch
  • Saffron 1/2 tsp
  • Kewra water 1 tbsp
  • Balai 1 cup
  • Almonds and pistachio 2 tbsp
  • Ghee for frying bread
  • Cardamom powder 1/2 tsp
  • Water 1 cup

Method:

  1. To make the sugar syrup, cook sugar and water in a saucepan until the sugar dissolves.
  2. Heat ghee in a pan and add yellow color.
  3. Fry bread slices in ghee, pour prepared sugar syrup in an oven tray.
  4. Assemble bread slices in the syrup, top with milk and balai, saffron and kewra.
  5. Sprinkle almonds and pistachios. Cover and cook on low flame for 10 to 15 minutes till the mixture dries.

Ingredients for BBQ Chicken Green Boti:

  • Chicken boneless cubes 1/2 kg
  • Ginger garlic 1 tbsp
  • Roasted and crushed cumin 1 tsp
  • Salt 1 tsp
  • White pepper 1/2 tsp
  • Green chillies 6 ground
  • Coriander leaves 4 tbsp
  • Cream 4 tbsp

Method:

  1. Marinate chicken for one hour with ginger garlic, roasted and crushed cumin, salt, white pepper, green chillies, coriander leaves ground and cream.
  2. Thread the chicken pieces on skewers.
  3. BBQ on a grill pan or bake in an oven. Serve hot.
