Rice Balls

Ingredients:

  • 3 Cups Hot Cooked Rice
  • 1 Cup Mozzarella Cheese, Shredded
  • 2 Eggs
  • Dash Of Salt
  • Dash Of Freshly Ground Pepper
  • 1/4 Teaspoon Garlic Powder
  • 1/2 Cup Bread Crumbs
  • 1/2 Cup Parmesan Cheese, Shredded

Method:

  1. Preheat oven to 425 degrees
  2. Combine garlic powder, rice, mozzarella cheese, eggs, salt and pepper in a bowl and mix well.
  3. Let it set for 15 minutes at room temp to get a forming consistency.
  4. Then with fingertips, make 1-2 inch balls out of the mixture.  
  5. Mix bread crumbs with Parmesan cheese in a shallow dish roll the rice balls in mixture, coat evenly.
  6. Place the rice balls on cookie sheet and bake for 17-20 minutes.
  7. Serve.

Rice Balls appetizer goes nicely with a plate of fresh sautéed vegetables
