Bhindi Do Piazza, Daal Mash Aur Qeema And Tandoori Ginger Chicken by Shireen Anwer

Ingredients for Bhindi Do Piazza:

  • Lady fingers 1 kg
  • Onion 2
  • Cumin seeds 1 tsp
  • Onion seeds 1/2 tsp
  • Ginger garlic paste 1 tsp
  • Cumin roasted 1 tsp
  • Coriander roasted 1 tsp
  • Chilli powder 1 tsp
  • Salt 1 tsp
  • Turmeric 1/4 tsp
  • Yogurt whipped 1/2 cup
  • Oil 1/4 cup
  • Green chillies 4 whole

Method:

  1. Heat oil, put cumin seeds, onion seeds and onion, fry it until light golden.
  2. Now add ginger garlic paste, chilli powder, turmeric, salt, coriander roasted, cumin roasted, whole green chillies and whipped yogurt and fry it.
  3. Then add lady fingers, cover it, cook on low flame for 10 minutes and serve with puri.

Ingredients for Daal Mash Aur Qeema:

  • Daal mash 1 cup
  • Mince 1/2 kg
  • Onion 1
  • Ginger garlic paste 1 tbsp
  • Chilli powder 1-1/2 tsp
  • Salt 1-1/2 tsp
  • Oil 1/2 cup
  • Turmeric 1/2 tsp
  • Green chillies chopped 4
  • All spice 1 tsp
  • Coriander leaves 2 tbsp
  • Yogurt 1/2 cup

Method:

  1. Firstly, heat oil, fry onion slice until light golden.
  2. Now add ginger garlic paste and mince and fry for 5 minutes.
  3. Then add turmeric, chilli powder, salt, yogurt and roast nicely.
  4. Now cover it and cook until mince is tendered.
  5. Then add soaked daal mash and toast it.
  6. Now add 1 cup water and cook until daal is tendered.
  7. In end, put green chillies chopped, coriander leaves and all spice and keep on simmer.

Ingredients for Tandoori Ginger Chicken:

  • Chicken 1 kg or 8 pieces
  • Ginger 1 tbsp
  • Garlic 1 tsp
  • Chilli powder 1-1/2 tsp
  • Raw papaya 1 tbsp
  • Salt 1-1/2 tsp
  • Oil 1/4 cup
  • Yogurt 1/2 cup
  • All spice 1-1/2 tsp
  • Lemon juice 2 tbsp
  • Coriander roasted 1-1/2 tsp
  • Cumin roasted 1 tsp

Method:

  1. Firstly, marinate chicken with finely chopped ginger, garlic, chilli powder, raw papaya, salt, oil, yogurt, all spice, lemon juice, coriander roasted, cumin roasted and leave for 2 hours.
  2. Now keep in oven tray and bake on pre-heated oven on 180 degrees C for 30 minutes.
  3. Now give smoke of coal or serve as BBQ.
