Green Spice Biryani And Mutton Shorba by Chef Zakir

Ingredients for Mutton Shorba:

  • Mutton 1/2 kg
  • Brown onion 2
  • Yogurt 250 gm
  • Green Chilies 2-3
  • Boiled tomatoes  2
  • Ginger garlic paste 1 tbsp
  • Chili powder 1 tsp
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • Turmeric 1/2 tsp
  • All spice powder 1/2 tsp
  • Cinnamon 1 inch piece
  • Salt to taste
  • Oil 1/4 cup

Method:

  1. Firstly, heat oil, fry onions, crush with hands and keep it on a side
  2. Now add ginger garlic paste and mutton in this oil and roast it slightly.
  3. Then add red chili powder, turmeric, green coriander powder and cumin and roast for 1 to 2 minutes.
  4. Now add cinnamon, salt, yogurt, green chilies and 1-1/2 to 2 cup water cover it and leave for cooking.
  5. After 25 to 30 minutes, when the mutton tendered add all spice powder and fried onions and roast it on flame.
  6. Delicious Mutton Shorba is ready.

Ingredients for Green Spice Biryani:

  • Chicken 1/2 kg
  • Rice 300 gm
  • Yogurt 250 gm
  • Onion 2
  • Whole spices as required
  • Green chilies 6-8
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • Chili powder 1 tsp
  • Crushed red pepper 1 tsp
  • Coriander leaves 1/2 bunch
  • Mint leaves 1/2 bunch
  • Yellow color a pinch
  • Salt to taste
  • Oil 1/2 cup
  • Ginger garlic paste 1 tbsp
  • Nutmeg mace powder 1/2 tsp
  • Capsicum 1

Method:

  1. Firstly heat oil in pan and fry onions. When golden in color, take out some  onions and keep it aside. Pour water, ginger garlic paste and chicken in  remaining onions. Roast the chicken till it changes its color.
  2. Now add 1 cup water and salt and cover its and leave for cook.
  3. Put green chilies, capsicum, green coriander and mint in blender and make paste with water
  4. After 8 to 10 minutes, remove its cover, add yogurt, whole spice, green coriander, cumin, chopped red chili, crushed red pepper, salt, blended masala and roast it slightly and close stove.
  5. In separate pan, boil rice with salt.
  6. Add chicken before 1/4 rice and then add 2/4 rice. Sprinkle nutmeg, fried onions and yellow color on top, simmer it for 10 - 12 minutes.
  7. Delicious green spice biryani is ready.
