Jheenga Biryani, Qatlama And Creamy Salad Raita by Chef Gulzar

Ingredients for Jheenga Biryani:

  • Prawns 1/2 kg
  • Rice 1/2 kg
  • Mint Leaves 1 bunch
  • Onions 2
  • Clarified butter 1 cup
  • Tomatoes 4-5
  • Cloves 6-8
  • Green cardamom 6-8
  • Cumin seeds 1 tsp
  • Coriander seeds 1 tbsp
  • All spice powder 1 tbsp
  • Garlic paste 1 tbsp
  • Crushed garlic 1 tbsp
  • Turmeric powder 1/2 tsp
  • Chinese salt 1/2 tsp
  • Red chili powder 2 tbsp
  • Salt to taste

Method:

  1. For Making Rice: Add butter, all spice masala, cumin roast it for 2 to 3 minutes in one pot.
  2. Now add rice and water.
  3. When it boils 1/4, strain it and keep aside.
  4. For Making Prawns: Spread salt and ginger garlic paste on prawns, deep fry it and keep aside.
  5. For making Masala: Put garlic and ghee in pot and roast for 1 to 2 minutes
  6. After that, add onion and fry it.
  7. Then add half cup water, tomato, chopped red chili, all spice masala, chopped coriander, turmeric and chinese salt and roast it nicely until mixture becomes thick and remove from heat.
  8. For Making Layer: Make layer of masala in pot.
  9. Then put rice on top. Now put mint and prawns.
  10. Then put remaining masala and rice and remaining mint and simmer it.
  11. When simmer is done, take out in dish and serve.

Ingredients for Qatlama:

For Roti:

  • Flour 2 cups
  • Baking soda 1 pinch
  • Sugar 1 tsp
  • Olive oil 4 tbsp
  • Salt to taste

For Paste:

  • Gram flour 1 cup
  • Cumin seeds 1 tsp
  • Fenugreek leaves 1 tsp
  • Turmeric 1/2 tsp
  • Pomegranate seeds 2 tbsp
  • Talhar chili paste 4 tbsp
  • Oil to fry
  • Salt to taste

Method:

  1. For Making Roti: Put salt, baking powder, olive oil and salt in flour and mix it.
  2. Now knead with water as required and make thin roti.
  3. For Making Paste: Pit gram flour, talhar chili paste, pomegranate seed, chopped cumin, fenugreek leaves, chopped turmeric and salt in blender and make paste.
  4. For Making Qatlama: Spread paste on roti like pizza.
  5. Deep fry in oil as required and serve.

Ingredients for Creamy Salad Raita:

  • Yogurt 2 cups
  • Tomatoes 1
  • Onion 1
  • Cucumber 1/4 cup
  • Crushed white cumin 1/2 tsp
  • Red chili powder 1/2 tsp
  • Sugar a pinch
  • Salt to taste

Method:

  1. Blend all ingredients in chopper nicely and serve.
