Aloo Pulao Boti Masala, Fried Kabab And Podinay Ka Aamchhoor by Rida Aftab

Ingredients for Aloo Pulao Boti Masala:

  • Mutton 1/2 kg
  • Rice 1/2 kg
  • Potatoes 1/2 kg
  • Onions 2
  • Mint leaves 1 bunch
  • Green chilies 2 tbsp
  • Ginger garlic paste 1 tbsp
  • Black cumin 1 tsp
  • Whole black pepper 1 tsp
  • Bay leaves 2
  • Salt 2 tsp
  • Black cardamoms 4
  • Oil 1/2 cup
  • Fennel seeds 1 tbsp
  • Whole coriander 1 tbsp
  • Shan bombay biryani masala 2 tbsp

Method:

  1. Firstly, soak sela rice in water for 2 hours.
  2. Now heat oil, put onions and make it brown.
  3. Then add potatoes, whole black pepper, bay leaves, black cardamoms, ginger garlic paste, shan mumbai masala and green chili paste.
  4. After that, put boil mutton and roast it nicely.
  5. Now, add water and leave it for 10 minutes to cook.
  6. Then put sela rice and cook more. When it starts to simmer add mint, chopped fennel and whole coriander and simmer for 20 minutes and turn off the stove.

Ingredients for Fried Kabab:

  • Minced meat 1/2 kg
  • Onion 250 grams
  • Green chilies 6
  • Ginger 1 piece
  • Black pepper 1 tsp
  • All spice powder 1 tsp
  • Salt 1 tsp
  • Coriander leaves 1/2 bunch
  • Bread slices 4
  • Cumin  2 tsp
  • Red chili powder 1 tsp
  • Skewers picks 8
  • Oil as required

Method:

  1. Put mince, all spice powder, black pepper, salt, green coriander, cumin and red chili powder in chopper, grind it and take out
  2. Then add onions, green chilies and ginger clove in chopper and grind it.
  3. Now mix all ingredients nicely, make small small round kababs, put tooth picks in it and fry in oil.

Ingredients for Podinay Ka Aamchhoor:

  • Onions 2
  • Tomatoes 2
  • Mint leaves 1/2 bunch
  • Cucumber 1
  • Green chilies 2
  • Lemon juice 1 tbsp
  • Black pepper 1/2 tsp
  • Salt 1/2 tsp
  • Beetroot 1
  • Salad leaves 1
  • Sugar 1/2
