Machli Pulao, Sweet Vermicelli And Mirch Gosht by Zubaida Tariq

Ingredients for Machli Pulao:

  • Fish 1/2 kg
  • Rice  2 cups
  • Lemons 2
  • Chopped onion 3
  • Green chilies 5
  • Oil 1 cup
  • Yogurt 1/2 cup
  • All spice as required
  • Turmeric 1 tsp
  • Black cumin 1 tsp
  • Ginger garlic paste 1 tbsp
  • White vinegar 2 tbsp
  • Salt to taste

For Stock:

  • Garlic 1 clove
  • Green cardamom 3
  • Black peppercorn 4
  • Water 3-4 cup
  • Ginger 1 small
  • Fennel seeds 1 tsp
  • Coriander seeds 1 tbsp

Method:

  1. Put water, whole garlic, ginger, black pepper, green cardamom, whole coriander and fennel seeds in one pot, make stock and strain it.
  2. Now put white vinegar without washing fish fillet and leave for 5 minutes.
  3. Now wash it, put turmeric, salt and lemon juice and leave it.
  4. Now heat oil in one pot, fry chopped onions until brown, take out half of it and spread on tissue paper.
  5. Put  yogurt, ginger garlic paste, whole garam masala and green chilies in remaining onion, roast it and add stock.
  6. When it boils, take out water of soaked rice and put rice.
  7. Together add salt, stir it, covering it and when water dries simmer it.
  8. Now deep fry fish fillet in separate pan until brown.
  9. In end, take out rice in dish, keep fish fillet, put brown onion and serve with yogurt raita.

Ingredients for Sweet Vermicelli:

  • Vermicelli 1 packet
  • Sugar 1-1/2 cup
  • Rosewater few drops
  • Small cardamom 6
  • Sugar 1 tsp
  • Almonds and pistachio  as required
  • Coconut 1/2 cup
  • Fresh milk 1 cup
  • Water 1/2 cup
  • Butter 2 tbsp
  • Khoya as required

Method:

  1. Grind small cardamom and sugar together.
  2. Put water and 1-1/2 sugar in one pot and make syrup of it.
  3. Put butter or ghee in pot, roast it lightly and add sugar.
  4. Then put vermicelli and roast it nicely.
  5. When they turn to golden brown, then pour syrup and stir it quickly.
  6. When syrup starts to absorb, put fresh milk.
  7. After that, add few drops of rose water and simmer for 2 minutes.
  8. In end, take out in dish, garnish with boiled almonds, pistachio and silver paper, put khoya and serve.

Ingredients for Mirch Gosht:

  • Mutton 225 gm
  • Yogurt 1/2 cup
  • Chopped onion 2
  • Ginger powder 1 tsp
  • Garlic powder 1 tsp
  • Black pepper 1 tsp
  • All spice powder 1 tsp
  • Curry leaves 4
  • Red chilies 10-12
  • Green coriander few
  • Lemons 1
  • Water 1-1/4 cup
  • Oil 3 tbsp
  • Salt to taste

Method:

  1. Heat oil in one pot and make onion red.
  2. Now put mutton, chopped ginger, chopped garlic, salt and water and cook on low flame.
  3. When mutton tenders, put yogurt.
  4. After that, fry green chilies and red chilies lightly and put in mutton.
  5. Together put black pepper, chopped garam masala, green coriander and lemon juice and simmer for 5 to 10 minutes.
  6. Delicious Mirch Gosht is ready.
