Chilled Souffle, Fish Fillet With Butter Sauce And Chicken Patties by Rida Aftab

Ingredients for Chilled Souffle:

  • Eggs 4
  • Almonds (peeled) 6
  • Peaches or oranges 1 cup
  • Condensed milk 1 cup
  • Cream (extra) 1 cup
  • Orange juice 1 cup
  • Cream 2 cup
  • Castor sugar 1/2 cup
  • Water 1/4 cup
  • Vanilla essence 1 tsp
  • Orange rind 1 tsp
  • Gelatin powder1 tbsp

Method:

  1. Beat egg yolk, vanilla essence, orange juice, orange skin and caster sugar.
  2. Now dissolve gelatin powder in water and add in egg mixture.
  3. Then beat egg white separate and put cream in it.
  4. Now add in gelatin powder and egg white and fold it.
  5. Then put in souffle dish and keep in fridge for whole night.
  6. In end, garnish with orange or peaches and almonds and serve.

Ingredients for Chicken Patties:

  • Puff pastry 1/2 kg

For Filling:

  • Boiled & shredded chicken 300 gm
  • Onion chopped 1
  • Egg 1
  • Black pepper 1 tsp
  • Coriander leaves 1 tbsp
  • Mayonnaise 1 tbsp
  • Oil 1 tbsp
  • Tomato ketchup 2 tbsp
  • Cream 2 tbsp
  • Salt 1/2 tsp

Method:

  1. Heat oil and put boiled & shredded chicken.
  2. Now fry boiled chicken for 1 minute, add onion and cook it.
  3. Then put cream, mayonnaise, black pepper, salt and tomato ketchup and dry its water.
  4. After that, turn off its stove and put chopped green coriander.
  5. Now cut puff pastry with heal cutter.
  6. Then grease mold, keep puff pastry, press with hand and put chicken.
  7. After that, spread egg, keep another and press with hand.
  8. In end, place in preheated oven for 30 minutes. Chicken patties is ready.

Ingredients for Fish Fillet With Butter Sauce:

For Marinating Fish:

  • Fish fillet 2
  • Black pepper 1 tsp
  • Salt 1/4 tsp
  • Flour 2 tbsp

For Butter Sauce:

  • Egg yolk 1
  • Chicken stock 1 cup
  • Butter 100 gm
  • Lemon juice 1 tsp
  • Flour 1 tbsp
  • Oregano 1/2 tsp
  • Cream 2 tbsp
  • Parsley for garnish

Method:

  1. Marinate fish fillet with black pepper, salt and flour.
  2. Now heat butter, fry fish fillet and take out.
  3. Roast flour in remaining butter, add chicken stock, lemon juice, egg yolk, cream and oregano and cook it.
  4. In end, first keep fish in serving dish, put butter sauce on top and serve.
