Khati Chicken Keema Biryani, Vegetable Shami Kabab And Adraki Chops by Zubaida Tariq

Ingredients for Khati Chicken Keema Biryani:

  • Chicken mince  1/2 kg
  • Red chili powder 1 tbsp
  • Ginger garlic paste  1 tbsp
  • Turmeric  1 tsp
  • Green chilies  10
  • Chopped mint leaves  1 bunch
  • Salt  to taste
  • Crushed cumin 1 tbsp
  • Tamarind paste  1/2 cup
  • Potatoes 4
  • Curry leaves few
  • Green coriander 1/2 bunch
  • Oil 1 cup
  • Chopped onion 3

To Boil Rice:

  • Rice 2 cup
  • Mint leaves 1/2 bunch
  • Green chillies 3
  • Black pepper corn  4
  • White vinegar  1 tbsp
  • Salt  to taste
  • Fresh milk  1/2 cup
  • Yellow food color as required
  • Lemons  2

Method:

  1. First, heat oil in one pot, do chopped onions golden brown, take out and spread on tissue paper.
  2. Now put chicken mince, salt, turmeric, red chili powder and ginger garlic paste and roast mince well.
  3. Then fry green chilies lightly in one frying pan and put in mince.
  4. Then add chopped cumin, thick paste and add curry leaves, roast for 5 minutes and remove it.
  5. Now wash rice and soak it Then put salt, chopped mint, green chilies, black pepper and white vinegar, boil it 2/4th and strain water.
  6. Peel potatoes, cut like chips and fry it until golden brown.
  7. Now grease bottom of rice pan and spread mince.
  8. Then put half onions and put potatoes.
  9. Now put remaining rice and add milk and food color in end.
  10. Then put lemon juice and simmer it.
  11. When steam comes up, take out biryani, put fried onions and serve.

Ingredients for Adraki Chops:

  • Mutton chops 1/2 kg
  • Ginger 2 tbsp
  • Yogurt 1 cup
  • Lemons 4
  • Salt to taste
  • Black pepper 1 tsp
  • Red chilies  4
  • Oil as required

Method:

  1. Mix mutton chops, yogurt, ginger and salt in one pot and cook it.
  2. When water dries, remove it.
  3. Now heat oil in frying pan, put mutton chops and shallow fry it.
  4. When golden brown, put again in pot, put red chilies, black pepper and lemon juice and simmer it.
  5. After 5 minutes, mutton chops are ready.

Ingredients for Vegetable Shami Kabab:

  • Boiled potatoes  4
  • Carrots  2
  • Peas 1/2 cup
  • Green beans 8
  • Red chili flakes   tbsp
  • Crushed cumin 1/2 tbsp
  • Black pepper 1 tbsp
  • Salt to taste
  • Green chilies 4
  • Rice flour 3 tbsp
  • Bread crumbs 1 packet
  • Green coriander 1 bunch
  • All spice powder 1 tsp
  • Lemons  2
  • Egg whites 2
  • Oil as required

Method:

  1. First, peel potatoes and mash with fork.
  2. Grate carrots and dry in its water.
  3. Now stir fry green beans and peas with oil in frying pan and grind in chopper.
  4. Then mix vegetables in one big bowl.
  5. Together mix rice flour, bread crumbs, red chili flakes, black pepper, green chilies, chopped green coriander, salt, crushed white cumin and lemon juice nicely.
  6. Now make shami kebab, dip in egg white and do golden brown with oil in frying pan.
  7. In end, take out and serve with tomato ketchup.
