Malai Gobhi, Apple Strudel And Lemon Garlic Chicken by Chef Zakir

Ingredients for Apple Strudel:

  • Puff pastry 1/2 kg
  • Egg 1
  • Apple 3-4
  • Sugar 125 gm
  • Lemon juice 2 tbsp
  • Raisin 125 gm
  • Cinnamon powder 1/2 tsp
  • Icing sugar as required
  • Peach 1/2 tin
  • Flour as required

Method:

  1. First, put flour on puff pastry, knead it and spread it. Now cut edges and make it square.
  2. Then put slices of apple in  bowl.
  3. Now put sugar, lemon juice, raisin, cinnamon powder, sugar, chopped peach and mix nicely.
  4. Then keep on kneaded puff pastry. Polish edges with beaten egg and roll pastry.
  5. Then polish both edges with egg and close it completely.
  6. Now keep on baking tray, polish top with remaining egg and bake in preheated oven on 170 degree C for 20 to 25 minutes.
  7. When golden brown, take out from oven, cut it and keep on platter.
  8. Sprinkle icing sugar on top and serve.

Ingredients for Lemon Garlic Chicken:

  • Chicken breast 2
  • Salt to taste
  • Garlic chopped 3-4 cloves
  • Black pepper powder 1 tsp
  • Crushed red pepper 1 tsp
  • Lemon juice 2 tbsp
  • Corn flour 1 tbsp
  • Lemon skin 1 tsp
  • Vinegar 2-3 tbsp
  • Butter 1 tbsp
  • Oil 2 tbsp
  • Flour 1/4 cup

Method:

  1. First, cut chicken breast into 1 to 2 layer.
  2. Now marinate with salt and black pepper.
  3. Then coat chicken with dry flour and shallow fry in oil.
  4. When chicken is shallow fried, take it out. Put oil and chopped garlic in this and fry until golden.
  5. Then add lemon skin, vinegar, crushed red pepper, remaining 1/2 tsp black pepper powder and 1/2 cup water.
  6. When it is mixed well and cooked, keep flame high, dissolve cornflour in water and make gravy thick.
  7. Delicious lemon garlic chicken is ready.

Ingredients for Malai Gobhi:

  • Cauliflower 1/2 kg
  • Salt to taste
  • Ginger 1 inch piece
  • Garlic 2-3 cloves
  • Green chilies 2-3
  • Onion 1 medium
  • Peas boiled 1/2 cup
  • Tomatoes boiled 3
  • Chili powder 1 tbsp
  • Turmeric 1/2 tsp
  • All spice powder 1/2 tsp
  • Khoya 125 gm
  • Coriander leaves 1/4 bunch
  • Yogurt 125 gm
  • Oil 1/4 cup

Method:

  1. First, cut flowers of cauliflower, give boil in water, take out and keep aside.
  2. Now add ginger, garlic, green chilies, onion and tomatoes in blender and grind well with 1/2 cup water.
  3. Then heat oil in karahi pan and add ginger garlic paste.
  4. Cook for 2 to 3 minutes, after that, add yogurt, salt, chili powder, turmeric, all spice powder and 1 cup water, cover it and cook it.
  5. Remove its cover after 10 to 12 minutes, add boiled cauliflower, boiled peas, chopped green coriander and khoya, mix well and serve.
