Kashmiri Chicken, Kashmiri Khajoor Ky Ladoo And Kashmiri Dum Aloo by Zubaida Tariq

Ingredients for Kashmiri Khajoor Ky Ladoo:

  • Dates 1/2 kg
  • Chopped almonds 15
  • Chopped pistachio 15
  • Semolina 1 cup
  • Sugar 1 cup
  • Crushed cardamom  4
  • White sesame seeds 3 tbsp
  • Coconut powder 1 packet
  • Oil 1 tbsp

Method:

  1. Crush the dates and take out its seeds.
  2. Now pour oil in a pan, add crushed cardamom.
  3. Then add semolina, for roasting add chopped almonds, pistachio, roast it lightly.
  4. Now remove it from stove and add date.
  5. When the semolina becomes cool then add sugar.
  6. Now add coconut powder, white sesame seeds, grease the oil, and make small portions.

Ingredients for Kashmiri Chicken:

  • Chicken 1
  • Yogurt 1
  • Ginger garlic paste 1 tbsp
  • Chopped tomatoes 4
  • Degi red chili 3
  • White vinegar few drops
  • Crushed coriander 1 tbsp
  • Onion paste 2
  • White cumin 1 tbsp
  • All spice powder 1 tsp
  • Oil 1 cup
  • Lemons 2
  • Butter 1 tbsp
  • Green chilies 4
  • Chopped green coriander 1 bunch
  • Salt to taste

Method:

  1. Pour oil in a pan, add chicken pieces for frying.
  2. Then add onions make them golden brown.
  3. Now add chopped tomatoes, ginger garlic paste, salt.
  4. During this add chopped red chilies, few drops of white vinegar, water boil it well,
  5. blend it well.
  6. Now add chopped sugar, chopped coriander, chopped white cumin.
  7. When the water of tomatoes are fried, add sugar, cumin, coriander, chopped garam masala, roast it well.
  8. Then add green chilies, butter, lemon juice, simmer it for 10 minutes.
  9. In the end add chopped green coriander, serve it hot.

Ingredients for Kashmiri Dum Aloo:

  • Boiled potatoes  1/2 kg
  • Crushed red chili  1/2 tbsp
  • Crushed cumin  1/2 tbsp
  • Tamarind paste  1/2 cup
  • Brown sugar  1 tbsp
  • Green chilies 4
  • Salt  to taste
  • Chili garlic sauce  1 tbsp
  • Oil  as required

Method:

  1. First peel the skin of potatoes, deep fry it and make it golden brown.
  2. Now pour oil in a pan, add chopped red chili, chopped white cumin, brown sugar, tamarind paste make it thick, salt, roast it lightly, put tomatoes.
  3. Then add 4 green chilies, chili garlic sauce, simmer it for 5 minutes.
  4. Delicious kashmiri dum aloo is ready.
