Spanish Chicken Pulao, Thai Pan Fried Fish And Chinese Tofu With Vegetables by Chef Zakir

Ingredients For Spanish Chicken Pulao:

  • Rice 300 gm
  • Chicken breast boneless 2
  • Green capsicum 1
  • Red capsicum 1
  • Tomatoes 2
  • Garlic 3 cloves
  • Parsley  1/2 bunch
  • Lemon (juice)  1
  • Saffron  2 pinch
  • Black pepper powder as required
  • Ghee  1/2 cup
  • Salt to taste

Method:

  1. First pour ghee, add chopped garlic and fry it.
  2. When the garlic turns to red, add chicken breast, roast it till its color changes, so that the water dries.
  3. Then add capsicum, green capsicum, cook it for 1 to 2 minute.
  4. Then pour water.
  5. When the rice starts to cook, and comes to top, add tomatoes, chopped parsely, lemon juice, saffron, chopped black pepper, salt.
  6. When rice is simmered then mix it for 8 to 10 minutes.
  7. Serve it when it becomes ready.

Ingredients For Chinese Tofu With Vegetables:

  • Bean curd 250 gm
  • Garlic chopped  3-4
  • Soya sauce  1 tbsp
  • Oyster sauce 1 tbsp
  • Oil  2-3 tbsp
  • Sesame seeds 1 tbsp
  • Onion  1
  • Cauliflower 1/4 piece
  • Capsicum  1
  • Green beans 125 gm
  • Coriander leaves  a little
  • Mint leaves  a little
  • Salt  to taste
  • Black pepper powder  1/2 tsp
  • Chili garlic sauce 2 tbsp
  • Oil  for fry

Method:

  1. First add bean curd, make its pieces deep fry it well, make its golden color, keep it on a side.
  2. Now pour oil in a pan, add garlic for frying.
  3. Then add onions, cabbage, capsicum, green beans, and vegetables.
  4. Fry it for 2 to 3 minutes, add chili garlic sauce, oyster sauce, soya sauce, chopped black pepper,salt, green coriander, mint, fry it add bean curd mix it well, take it out then serve.

Ingredients For Thai Pan Fried Fish:

  • Garlic paste 1 tbsp
  • Oil  2 tbsp
  • Fish sliced 1/2 kg
  • Coriander leaves 1/2 bunch
  • Basil chopped 1/4 bunch
  • Lemon skin 1 tsp
  • Garlic  3-4 cloves
  • Fish sauce 1 tbsp
  • Lemon juice 1 tbsp
  • Chili sauce 1 tbsp
  • Fresh red chilies 2
  • Salt  to taste
  • Charcoal  as required

Method:

  1. First put the green coriander, basil chopped, lemon skin, chopped garlic, fish sauce, lemon juice, chili sauce, pour oil add pieces.
  2. Now add fish slices, red fresh chilies, garlic paste, lemon juice, salt marinate it well.
  3. Along chopped pistachio marinate it with green masala.
  4. Now put coals in bbq equipment.
  5. Now fry some fish pieces in pan.
