Chana Fry Kabab, Beef Piyaz Pasanaday And Garlic Chicken Balls by Chef Zakir

Ingredients For Beef Piyaz Pasandey:

  • Beef undercut 1/2 kg
  • Onion 3
  • Green chilies  4
  • Coriander leaves  1/4 bunch
  • Ginger garlic paste 2 tbsp
  • Yogurt  250 gm
  • Nutmeg mace powder  1/4 tsp
  • Coriander powder  1 tbsp
  • Cumin powder 1 tsp
  • Turmeric  1 tsp
  • Crushed red pepper 1 tbsp
  • Salt  to taste
  • Oil  1/4 cup

Method:

  1. First cut the undercut beef press it with help of hammer.
  2. Now pour oil in a pan, add ginger garlic paste.
  3. When it is cooked well then roast it make it dry.
  4. Then add onion, green chilies, yogurt, chopped nutmeg mace, chopped green coriander, cumin, turmeric, chopped red chilies, salt cover and let it cook.
  5. Remove its cover after 12 to 15 minutes keep its temperature high, roast it well then serve.

Ingredients For Garlic Chicken Balls:

  • Chicken 1/2 kg
  • Egg  1
  • Ginger garlic paste 1 tbsp
  • Capsicum 1 
  • Onion 2
  • Carrot 1
  • Tomato 1
  • Garlic  6-7 cloves
  • Corn flour  3 tbsp
  • Tomato ketchup  2 tbsp
  • Chili garlic sauce  2 tbsp
  • Worcester sauce  2 tbsp
  • Oyster sauce  1 tbsp
  • Black pepper powder  1/4 tsp
  • White pepper powder 1/4 tsp
  • Salt  to taste
  • Oil as required

Method:

  1. First cut the chicken into cubes.
  2. Now add chicken, ginger garlic paste, salt, chopped red chilies, chopped white pepper, egg in a blender.
  3. Then add mixture into a bowl make small balls.
  4. Now add capsicum, onion, carrot, tomatoes pieces.
  5. Then pour oil in pan put ginger garlic paste then roast it.
  6. Then add all balls of vegetables and chicken.
  7. Along tomato ketchup, oyster sauce, chili garlic sauce, salt, worcester sauce, water cook it for a while.
  8. Then add corn flour in water saturate it well and make its sauce thick, when its become ready then serve it hot.

Ingredients For Chana Fry Kabab :

  • Chickpeas  1 1/2 cup
  • Capsicum  half
  • Onion 1
  • Tomato  1
  • Coriander leaves  1/4 bunch
  • Mint leaves  1/4 bunch
  • Green chilies  3
  • Salt  to taste
  • Crushed red pepper  1/2 tsp
  • Cumin seeds  1/2 tsp
  • Coriander powder 1/2 tsp
  • Dry mango powder 1/2 tsp
  • Egg  1
  • Gram flour  3 tbsp
  • Oil  for fry

Method:

  1. First add capsicum, onions, tomatoes and green chilies chop it well.
  2. Now add white peas and boil it.
  3. Then add chopped capsicum, onions, green chilies and tomatoes mix it well.
  4. Now add whole cumin , chopped coriander, chopped red chilies, salt, raw mango powder, egg and gram flour mix it well and make kabab.
  5. When all the kababs becomes ready then pour oil in a pan, fry the kababs.
  6. Serve it with any chutney.
