Shahi Murgh Musalam, Stuffed Double Chicken Chops And Lauki Ka Halwa by Shireen Anwer

Ingredients For Shahi Murgh Musalam:

  • Whole skinless chicken 1 kg
  • Black pepper powder 1/2 tsp
  • Ginger paste  1 tsp
  • Garlic paste  1 tsp
  • Green chili paste  1 tsp
  • White vinegar  1 cup
  • Yogurt  700 gm
  • Fried onions  1 cup
  • Cumin powder  1/2 tsp
  • Red chili powder  1/2 tsp
  • Small cardamom powder  1/4 tsp
  • Whole cinnamon sticks  3-4 sticks
  • Saffron  1 pinch
  • Salt  as per taste
  • Sugar  2 tsp
  • Dried plums 8-10
  • Raisins  12-15
  • Almonds  8-10 pieces
  • Boiled baby potatoes  4 pieces
  • Boiled eggs  2 pieces
  • Oil  as required
  • Ghee   as required
  • Almonds and pistachio  for garnishing

Method:

  1. First add whole chicken, add salt, chopped black pepper, ginger garlic paste, green chili paste marinate it for 30 minutes.
  2. Now pour oil in a pan, until its color changes.
  3. Then add yogurt, sugar, white vinegar, chopped onion, chopped cumin, chopped red chilies in a blender, add salt and saffron and chopped small cardamom blend it.
  4. Now put the chicken with yogurt mixture in a saucepan.
  5. Then add green cardamom, saffron and ghee cook it till the chicken tenders.
  6. Now add boiled small potatoes, boiled eggs, plum, raisins and almonds cook it for 10 minutes.

Ingredients For Lauki Ka Halwa:

  • Loki  2 kg
  • Khoya  500-750 gm
  • Milk  1 liter
  • Sugar  as per taste
  • Condensed milk 1 tin
  • Ghee  4 tsp
  • Small cardamom  2 tsp
  • Rose water  2 tbsp
  • Green food color  as per preference
  • Sliced almonds  for garnishing
  • Sliced pistachio  for garnishing
  • Silver paper  for garnishing
  • Rose petals  for garnishing

Method:

  1. First peel the skin of potato. give it a boil, now take out its water.
  2. Take a sauce pan, add lauki, milk, sugar, condensed milk and khoya pour ghee and cook it, until it becomes thick.
  3. Now add green food color, rose water and small cardamom.
  4. Then garnish with almonds, pistachio, silver paper and rose water and then serve.

Ingredients For Stuffed Double Chicken Chops:

  • Boneless chicken  750 gm
  • Ginger paste  2 tsp
  • Garlic paste   1 tsp
  • Green chilies  20-25 pieces
  • Black pepper powder 1.5 tsp
  • Salt  as per taste
  • Chicken mixture
  • Cumin 2 tsp
  • Poppy seeds  1.5 tsp
  • Almonds  10-15 pieces
  • Lemon 1

For Stuffing:

  • Boiled Carrots 2
  • Boiled Eggs  2
  • Boiled potatoes  2

For Frying:

  • Bread crumbs  for coating
  • Egg  for coating
  • Ghee  for frying

Method:

  1. Take a bowl add chicken mix it with ginger garlic paste, green chilies paste, salt, chopped black pepper, green chilies, lemon juice for marination.
  2. Now add raisins, almonds, cumin in a blender.
  3. Then add powder in chicken mixture and chop that mixture.
  4. Now do stiffing then fry.
