Fruity Coconut Rice by Zubaida Tariq

Ingredients:

  • Boiled rice 1 cup
  • Fruit cocktail 1 big tin
  • Coconut milk 2 cups
  • Brown sugar 8 tbsp
  • Chopped pistachio 20
  • Chopped almonds 20
  • Butter 2 tbsp

Method:

  1. Heat coconut milk in pot, put boiled rice and 5 tbsp brown sugar and cook it nicely.
  2. Mix 1/2 tin fruit cocktail without syrup, remove it and cook it.
  3. Now heat butter in frying pan, put 1/2 half fruit without syrup.
  4. Then add 3 tbsp brown sugar.
  5. When it becomes caramel, remove it and spread in serving dish.
  6. Put coconut rice on top.
  7. Then put chopped pistachio and chopped almonds and cool it.
  8. Fruity coconut rice is ready.
