Date Fudge by Zarnak Sidhwa

Ingredients:

  • Dates 350 gm
  • Butter 200 gm
  • Sugar 70 gm
  • Vanilla essence 3/4 tsp
  • Cinnamon powdered 3/4 tsp
  • Milk 1 cup
  • Salt a pinch
  • Biscuits (crushed) 200 gm
  • Almonds (chopped) 1/3 cup
  • Cashew nuts (chopped) 1/4 cup

Method:

  1. Soak dates in milk at least for 1 hour and grind coarsely.
  2. Heat a pan, melt butter, add coarse ground dates, saute well and then add sugar.
  3. Keep sauteing till mix comes out of pans (non sticky stage and ghee oozes out).
  4. Add cinnamon powder, vanilla essence and salt.
  5. Mix well, then add crushed almonds, mix well and take off flame.
  6. Add biscuits to date and mix well till it is evenly incorporated.
  7. Take a tray and grease with melted butter.
  8. Spread mix in tray and level it
  9.  Cool and slice to your desired shapes and serve.
  10. Garnish with cashew nuts.
