Khara Masala Keema by Chef Gulzar

Ingredients:

  • Beef mince 500 gm
  • Garlic chopped 4-5 cloves
  • Onion chopped 2
  • Whole black pepper 1 tsp
  • Whole cumin 1 tsp
  • Black cardamom 3-4
  • Cinnamon 2-3 sticks
  • Cloves 4-5
  • Bay leaves 2-3
  • Red chili flakes 1 tbsp
  • Green chilies 5-6
  • Fresh coriander 1/2 bunch
  • Ginger slice 1 inch
  • Oil 4-5 tbsp
  • Salt to taste

Method:

  1. Heat oil in pan, add whole black pepper, whole cumin, black cardamom, cinnamon, cloves and bay leaves and roast it.
  2. Then add chopped onion and chopped garlic and fry it.
  3. When onion is brown, add mince and roast it.
  4. Then put red chili flakes, mix it nicely and roast it.
  5. When mince is nearly tender, add fresh coriander and green chilies and simmer it.
  6. When simmered, dish out it and serve with parathay.
