Lucknowi Chicken Biryani by Shireen Anwer

Ingredients:

  • Chicken 1 kg
  • Rice 1/2 kg
  • Chopped fry onion 4 tbsp
  • Yogurt 1 cup
  • Salt 1-1/2 tsp
  • Ginger garlic 2 tbsp
  • All spices 1 tsp
  • Red chilies 1 tsp
  • Turmeric 1 pinch
  • Green chilies 6
  • Cashew nuts 6
  • Poppy seeds 1 tbsp
  • Coconut powder 1 tsp
  • Roasted gram powder 1 tsp
  • Saffron 1/4 tsp
  • Kewra 1 tsp

Method:

  1. Marinate chicken with ginger garlic, salt and yogurt for 30 minutes.
  2. Now heat oil and put green chilies, cashew nuts, poppy seeds, coconut powder and roasted gram powder.
  3. Then add marinated chicken. Also put red chilies, turmeric and all spices and fry it nicely.
  4. Now cover it and leave it until chicken tender and thick gravy remains.
  5. Boil rice 1/4 with salt and 1 tbsp whole mix spices.
  6. Now spread half rice in one pan with chicken mixture.
  7. Put remaining rice.
  8. Put saffron and kewra and keep on simmer for 15-20 minutes.
