Lamb With Onion & Olive by Chef Gulzar

Ingredients:

  • Mutton 1/2 kg
  • Onions sliced 4
  • Yogurt 250 gm
  • Bay leaves 2-3
  • Button red chilies 8-10
  • Green chilies 8-10
  • Ginger garlic 2 tbsp
  • Cinnamon 2-3
  • Cloves 2-3
  • Nutmeg mace 1/2 tsp
  • Black cardamoms 3-4
  • Cinnamon 3-4
  • Black peppercorns 1 tsp
  • Olives 1/2 cup
  • Oil as required
  • Salt to taste

Method:

  1. Heat oil, put bay leaves, red chilies, 2-3 cinnamon, cloves, nutmeg mace, black cardamoms, 3-4 cinnamon and black peppercorns and crackle it.
  2. Now add mutton and roast it.
  3. Now add ginger garlic and roast for 2-3 minutes.
  4. Now add yogurt and roast more for 2-3 minutes.
  5. Then add water as required and leave it until meat tender.
  6. When meat tender, add onion, green chilies and salt and mix it nicely.
  7. Then add olives and cook until salan leaves oil.
  8. Now take out in dish and serve.
