Coconut Chili Roti, Kukul Mas Curry And Lunu Miris by Chef Gulzar

                               COCONUT CHILI ROTI
INGREDIENTS:
  • All Purpose Flour:              2 cups
  • Grated Coconut:                1 cup
  • Finely Chopped Onion;     half
  • Green Chilies:                   4-5
  • Curry Leaves:                    1-2
  • Butter:                                1/2 cup
  • Salt:                                    to taste
METHOD:
  1. Add 2 cup of grated coconut, half finely chopped onion, 4-5 green chilies, 1-2 bay leaves, 1/2 cup butter and salt in 2 cup of all purpose flour, mix all ingredients together and make dough o it by adding water.
  2. Now make chapati of this dough on iron pan.
  3. At the end serve with sauce.

                            KUKUL MAS CURRY

INGREDIENTS:
  • Chicken:                             500 gm
  • Ginger Garlic Paste:           1 tbsp
  • Onion:                                 1
  • Red Chili Powder:              1 tbsp
  • Curry Powder:                    1 tbsp
  • Turmeric Powder:               1/2 tsp
  • Crushed Mustard Seeds:     1/2 tsp
  • Crushed Black Pepper:       1/2 tsp
  • Green Chilies:                     3-4
  • Curry Leaves:                     3-4
  • Vinegar:                              2-3 tbsp
  • Salt:                                     to taste
METHOD:
  1. Add 1/2 kg chicken, 1 tbsp red chili powder, 1/2 tsp turmeric powder, 1/2 tsp black pepper and 1 tsp curry powder in a mixing bowl and mix them together.
  2. Now heat oil in a pan and add 1 tbsp ginger garlic paste, 1 onion, 3-4 curry leaves and 1/2 tsp crushed mustard paste and fry them all together.
  3. Then add chicken, 3-4 green chilies, 2-3 tsp vinegar and mix them together . Now add water and cook until chicken starts to fester.  
  4. When chicken is cooked then serve hot.

                                   LUNU MIRIS

INGREDIENTS:
  • Talhar Chilies:        5-6
  • Onion:                     1
  • Garlic:                     4-5 cloves
  • Lemon Juice:          2 tbsp
  • Fish Sauce:             1 tbsp
  • Tamarind Paste:      2-3 tbsp
  • Salt:                         to taste
METHOD:
  1. Dip 5-6 talhar chilies in water and make paste of it when soften.
  2. Now lightly foment 1 onion and 4-5 garlic cloves.
  3. Then blend together 2-3 tbsp turmeric paste, salt, 2 tbsp lemon juice and 1 tbsp fish sauce. 
  4. Now lightly grill all on pan and serve with Chapati.
