Ingredients:

  • Potatoes 4
  • Rice 2 cups
  • Oil 1 cup
  • Peas 1 cup
  • Butter 1 tbsp
  • Grated carrots 2
  • Green chilies 4
  • Yogurt 1/2 cup
  • Ginger garlic paste 1 tbsp
  • All spice some
  • Black cumin 1 tsp
  • Small cardamom 4
  • Salt to taste
  • Onion 3

For Stock:

  • Water 3 cups
  • Coriander seeds 1 tbsp
  • White cumin 1 tsp
  • Garlic 1
  • Onion 1
  • Ginger 1 small piece
  • Salt to taste
  • Big cardamom 2
  • Black pepper 4
  • Fennel seeds 1 tsp

Method:

  1. For stock: Put all ingredients in pot, boil it, strain it and keep it aside.
  2. Then heat oil in big pot, fry onion until golden brown and take out half onion.
  3. Put yogurt, ginger garlic paste, black cumin, all spice, green chilies and small cardamom in half onion.
  4. Then roast it lightly, put peas and carrot, roast for 5 minutes and put stock.
  5. When stock boils, drain water of soaked rice and put rice and salt.
  6. Water dries, simmer it.
  7. Then cut potatoes like chips and deep fry it until golden brown.
  8. Before serving, take out pulao in dish and put potatoes and brown onion.
  9. Sabziyon ka pulao is ready.
