Date Ice Cream Cake by Zarnak Sidhwa

Ingredients:

  • Bananas (sliced and frozen) 4
  • Sponge Cake 1
  • Pitted Dates coarsely 170grams
  • Vanilla Ice-Cream 1 liter
  • Cocoa Powder 3 tsp
  • Extra Cocoa Powder to dust

Method:

  1. Line base and sides of a loaf pan with foil or cling, allowing it to overhang slightly.
  2. Cut cake into layers to fit in loaf pan.
  3. Line base of prepared pan with cake layer.
  4. Place frozen banana slices in food processor and process, until smooth and creamy.
  5. Transfer to large bowl.
  6. Add ice-cream and dates and stir until combined.
  7. Spoon ice-cream mixture over cake in pan and smooth surface.
  8. Dust with cocoa powder.
  9. Cover with foil and place in freezer for 8 hours or until firm.
  10. Use paper to lift ice-cream cake from pan.
  11. Transfer to a serving platter.
  12. Dust with extra cocoa powder, if necessary.
  13. Cut into slices to serve.
