Thai Chicken Pasta Salad by Zarnak Sidhwa

Ingredients:

  • Roasted chicken breasts 2
  • Boiled spiral pasta 2 cups
  • Creamy peanut butter 3/4 cup
  • Coconut milk 3/4 cup
  • Chopped coriander 1/4 cup
  • Lemon juice 1/4 cup
  • Sugar 1 tbsp
  • Salt 3/4 tsp
  • Cayenne pepper 1/4 tsp
  • Cucumber sliced 1
  • Spring onions thinly slices 6

Method:

  1. Bring water to boiling point, add in salt and oil, add spiral pasta, drain once done and oil so they don't stick.
  2. Meanwhile, in bowl whisk together peanut butter, coconut milk, coriander, lemon juice, sugar, salt and cayenne pepper until smooth.
  3. Add chicken, cucumber and spring onions to peanut butter mixture; stir to coat.
  4. In bowl, combine chicken mixture and pasta, toss to combine.
  5. Serve chilled.
