Sweet Apple Pancakes

Ingredients:

  • 2/3 cup all-purpose flour
  • 2 cups sliced apples
  • 2 teaspoons caster sugar
  • 2 tablespoons caster sugar
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup butter
  • Butter to fry
  • 1/4 teaspoon ground cinnamon
  • Maple Syrup to serve with

Method:

  1. Beat eggs and milk together in a medium bowl.
  2. In a separate bowl, sift together flour, 2 teaspoons sugar, and salt. Gradually add this flour mixture to egg mixture and beat until smooth and set aside.
  3. On low flame, sauté apples in 1/4 cup butter until tender. Add sugar and cinnamon together; stir into apples and set aside.
  4. Melt 2 tablespoons butter in a small skillet. Pour in batter to a depth of about 1/4-inch. When set, place one-fourth of the apples on top then cover with more batter. Fry pancake until lightly browned on both sides.
  5. Serve with butter and maple syrup.

This sumptuous breakfast treat is simpler to make and easy to serve.
