Kairi Ka Dopiaza
Ingredients
- Mutton ½ kg
- Coriander leaves
- Oil 1 cup
- Raw mango 2
- Green chilies 4
- Curry leaves few
- Onion 750 grams
- Turmeric 1 tsp
- Chili powder 1 tbsp
- Ginger Garlic paste 1 tbsp
- Salt to taste
Method
- In a pan put together ½ kg mutton, 1 bunch of chopped coriander leaves, 1 cup oil, 2 raw mangoes, 4 whole green chilies, fe curry leaves, 750 gm chopped onion 1 tsp turmeric, 1 tbsp chili powder, 1 tbsp ginger garlic paste and salt to taste.
- Cook over low flame without adding water.
- Cook well till water dries
- Garnish with coriander leaves and serves with plain boiled rice.
Kairi Ki Meethi Chutney
Ingredients
- Raw mangoes ½ kg
- Lemon 2
- Whole red chilies 10
- Raisins 15
- White vinegar ½ cup
- Sugar jaggery 1 ½ cup
- Onion seeds 1 tsp
- Ginger chopped 1 ½ tbsp
- Salt to taste
Method
- In an stainless stell pan put together ½ kg peeled and sliced raw mango, 15 raisins, 1 1 ½ cup sugar or jaggery, 1 ½ tbsp chopped ginger, ½ cup white vinegar, 1 tsp onion seeds, 10 whole red chilies and salt to taste.
- Mix with wooden spoon and cook over low flame.
- Remove from fire when sugar melts.
- Cool and add juice of 2 lemons.
- Fill in serialized jar.
Kairi Ka Guramba
Ingredients
- Raw mango 2
- Cloves 4
- Sugar 1 cup
- Water 4 to 6 cups
- Wheat flour 3 tbsp
- Ghee or oil 2 tbsp
Method
- Heat oil in pan, add in 4 cloves and fry.
- Now add 2 raw mango cut into pieces, fry and remove.
- Add 3 tbsp wheat flour and fry well.
- Now remove pan from fire.
- Leave it for 5 minutes, add in 4 to 6 cup sugar, cook over low flame till sugar melts, Guramba is ready to serve.
