Banana Curry And Shahjahani Biryani by Chef Zakir

Banana Curry 

Ingredients

  • 6 ripe bananas 
  • 2 medium onions
  • 4 to 5 green chilies
  • 1 cup coconut milk
  • ¼ cup oil
  • 1 tsp crushed fennel seeds
  • 1 tbsp red chili powder
  • 1 tbsp turmeric powder
  • Salt to taste
  • 2 tbsp tamarind paste
  • ¼ bunch fresh coriander
  • 1 tsp hot spices powder
  • 6 cloves of garlic
  • 125 grams yogurt

Method

  1. Firstly peal off 6 ripe bananas and cut into slices and keep aside.
  2. Heat ¼ cup oil in a cooking pan.
  3. Add 6 cloves garlic, sliced 2 onions fry till golden.
  4. Then add 125 grams yogurt, 4-5 green chilies, 1 tsp crushed fennel seeds, 1 tbsp red chili powder, 1 tbsp turmeric powder, salt to taste, ¼ bunch coriander leaves and 1 tsp whole spices powder.
  5. Cover and let it cook for 4 to 5 minutes.
  6. Then add sliced ripe banana and cover it again and cook for 8 to 10 minutes.
  7. Add 2 tbsp tamarind paste and 1 cup coconut milk.
  8. Then turn on high flame and cook till coconut milk goes thick.
  9. Ready to serve.
  

Shahjahani Biryani

Ingredients

  • ½ kg boneless mutton
  • 250 mutton yogurt
  • 1 medium onion
  • 4 to 5 dry red chilies
  • ½ kg rice
  • ½ cup clarified butter
  • 50 grams almonds, pistachios
  • 1 tsp ground cumin
  • 1 tbsp poppy seeds
  • ½ tsp cardamom powder
  • ½ tsp cinnamon powder
  • ½ tsp ground nutmeg, mace
  • ½ tsp ground clove
  • 2 tbsp chopped ginger, garlic
  • 3 tbsp almond powder
  • Salt to taste

Method

  1. First hat ¼ cup clarified butter in cooking pan. 
  2. Add mutton and sliced onion and cook till mutton color changes.
  3. Add 2 tbsp finely sliced garlic, ginger and 4 to 5 big dry red chilies and cook for 4 to 5 minutes.
  4. The add 3 tbsp almond powder, 1 tbsp ground cumin, ½ tsp ground clove, ½ tsp cardamom powder, ½ tsp cinnamon powder, ½ tsp ground nutmeg, mace, and ½ tsp ground clove.
  5. Add 250 gm yogurt and cook for 3 to 4 minutes and turn off the flame.
  6. Then in a separate pan add ½ rice in hot water and boil with salt and 1 to 2 cinnamon and add half mutton gravy.
  7. Add 2 tbsp kewra water and ½ cup fresh cream and add the rest of the rice with it.
  8. Add ½ tsp ground cardamom powder and sprinkle rest of clarified butter, crushed almond and pistachios.
  9. Ready to serve.
