Neapolitan Sauce

  • 2 tsp water
  • 1 clove garlic, crushed
  • 500ml tomato pure
  • 3 fresh basil leaves, finely chopped or pinch of dried basil leaves
  • ground black pepper
  • 2 tsp grated Parmesan cheese


  1. Heat the water in the saucepan until very hot.
  2. Add the garlic and simmer until tender.
  3. Add tomato pure, basil and black pepper to taste and stir.
  4. Simmer for 15-20 minutes, stirring occasionally.
  5. Spoon the hot sauce over cooked plain or whole meal spaghetti.
  6. Top with grated Parmesan cheese.
