Fried Cabbage

Ingredients:

  • 1 small Onion, finely chopped
  • 6 tbsp Oil
  • 1 large Tomato, sliced
  • 1/2 tsp Salt
  • 1/2 tsp Curry powder
  • 1 medium Cabbage, shredded
  • 2 Carrots, sliced into rounds
  • 1 Green bell pepper, chopped
  • ½ cup water

Method:

  1. Over moderate heat, fry the onion in oil until lightly browned, stirring to prevent scorching.
  2. Add tomatoes, salt & curry powder & continue to stir-fry for 3 minutes.
  3. Add cabbage, carrots & pepper & mix well.
  4. Pour in about 1/2 c water.
  5. Cover the pot, reduce heat & simmer until the liquid is absorbed & the cabbage is still slightly crunchy.
  6. Serve Hot
