Coconut Fried Shrimp

Ingredients:

  • 1/2 lb Unpeeled medium-size fresh shrimp
  • 3/4 cup Pancake mix
  • Vegetable oil
  • 1/4 cup All-purpose flour
  • 1 cup Flaked coconut

Method:

  1. Peel shrimp, leaving tails intact.
  2. Combine pancake mix in a small bowl; stir until smooth.
  3. Roll shrimp in flour, shake off excess. Dip shrimp into batter, and then roll in coconut.
  4. Fry, a few at a time, in oil in a pan for 45 seconds on each side or until golden.
  5. Drain on paper towels.
