Apricot Butter

Ingredients:

  • 10  cup Sliced apricots      
  • cup Water     
  • Sugar
  • 1/3  cup Orange juice     
  • 1 tb Granted orange rind

Method:

  1. Add water to apricots and cook until soft.
  2. Press through sieve.
  3. Measure and add 2/3 c sugar to each cup pulp.
  4. Add juice and grated orange rind.
  5. Cook until thick 15 minutes.
  6. Pour into sterilized pint jars to within 1/2 inch of top.
  7. Put on cap, screw band firmly tight and process in boiling water bath ten minutes.
