Paneer Roll, Mango Bavarian Cream And Lava Cake by Zarnak Sidhwa

Ingredients for Paneer Roll:

  • 1 tbsp oil
  • 1/4 tsp cumin seeds
  • 1 tbsp ginger garlic paste
  • 1/2 tsp turmeric powder
  • 1 capsicum
  • 1 carrot, chopped
  • Half cabbage, chopped
  • Salt to taste
  • 3 chopped green chillies
  • 2 tbsp coriander chopped
  • 200 gram paneer
  • Roll patties as required
  • Oil to fry
  • Serve with mixed green chutney

Method:

  1. Heat oil, add cumin seeds, ginger garlic paste, turmeric powder, capsicum, carrot, cabbage, green chillies and coriander and let cook till done and add salt.
  2. Crumble the cottage cheese and mix.
  3. Fill roll patties with this mixture, secure with flour and water mixture to roll into long rolls and fry in hot oil, serve with mixed green chutney,

Ingredients for Mango Bavarian Cream:

  • 2 tbsp gelatin powder
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 cup milk
  • 2 eggs, separated
  • 1 tsp vanilla essence
  • 1 cup mango puree
  • 2 tbsp lemon juice
  • 1 cup cream

Method:

  1. In a sauce pan, mix gelatin, 1/4 cup sugar, salt, milk and egg yolks, blend well.
  2. Stir over low heat until gelatin is dissolved and the mixture coats the back of a spoon remove from the heat and stir in the vanilla. Add mango puree to the gelatin mixture and transfer to a large mixing bowl.
  3. In a bowl, beat egg whites until foamy, gradually beating in remaining 1/4 cup sugar until soft peaks form.
  4. Whip the cream in another bowl, until stiff.
  5. Fold egg whites and cream into mango mixture.
  6. Turn into the mold.
  7. Chill the mixture until firm, unmold. Garnish with mango slices.

Ingredients for Lava Cake:

  • 5 oz chocolate
  • 100 gram butter
  • 4 eggs
  • 1/2 cup sugar
  • 3/4 cup flour
  • Dust with flour or cocoa powder

Method:

  1. Grease ramekins or cupcakes liners very well with butter and dust with flour or cocoa powder.
  2. Melt chocolate with butter in bowl set over a pan of simmering water.
  3. Beat eggs and sugar and fold in the flour and slowly fold in butter and chocolate mixture.
  4. Bake at 180 degrees C for only 10-12 minutes, the outer part of the cake should be cooked and middle should look liquidy.
  5. Serve over turned dusted with cocoa powder and cream or ice cream on the side.
