Chops Suey, Schezwan Chicken And Chinese Almond Biscuit by Rida Aftab

Ingredients for Chops Suey:

  • 400  grams chicken
  • 2 tbsp corn flour
  • 1 tsp garlic
  • 1 carrot
  • 1 cup cauliflower
  • 1 capsicum
  • 1-1/2 cup stock
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp chinese salt
  • 1 cup tomato ketchup
  • 1 tbsp vinegar
  • 4 tbsp oil
  • 2 eggs
  • 1/2 cup corn flour
  • 1 packet noodles
  • 1 cup oil

Method:

  1. Heat the oil in a pan, put garlic.
  2. When it scents, cover it for 5 minutes and roast it on high flame.
  3. Now add carrot, cauliflower, capsicum and cook it for 2 minutes.
  4. Then add cup stock. When it boils 1 to 2 times, add black pepper, salt, vinegar, chinese salt,  tomato ketchup, dissolve corn flour in water and turn off the stove.
  5. Then add noodles, salt and  oil in water and strain it.
  6. Now put oil on noodles. Take out corn flour in a plate and coat noodles in it and fry it in oil till becomes soft and take out.
  7. Now beat eggs in a bowl, add salt, black pepper, make omelet and cut it in vertically.
  8. Take out rice noodles in one plate, put chicken on top, put eggs on it and serve it.

Ingredients for Schezwan Chicken:

  • 1/2 kg chicken breast
  • 1 red capsicum
  • 1 green capsicum
  • 2 spring onion
  • 1 piece of ginger
  • 2-3 garlic cloves
  • 1 tsp black pepper
  • 1/2 tsp white pepper
  • 2 tbsp worchester sauce
  • 1/2 cup chili garlic sauce
  • 1/2 cup tomato ketchup
  • 1/2 cup stock
  • 1/2 tsp salt
  • 2-3 tbsp oil

Method:

  1. Heat the oil and put garlic cloves and ginger.
  2. Now add chicken breast, cover it and cook it.
  3. When the chicken is tendered, put red capsicum and green capsicum.
  4. After it, add stock, salt, white pepper, black pepper, wochester sauce, tomato ketchup and chili garlic sauce and turn off the stove.
  5. Delicious Schewan is ready. 

Ingredients for Chinese Almond Biscuit:

  • Melted butter for greasing
  • 125 grams unsalted butter
  • 1/2 cup caster sugar
  • 2 tsp orange zest
  • 1/2 tsp almond essence
  • 1 egg
  • 1-1/2 cups flour
  • 1/2 tsp baking powder
  • 30 almonds

Method:

  1. First heat the oven at 180c.
  2. Grease one big baking tray with butter and lined it.
  3. Now take one bowl, put unsalted butter, caster sugar, grated orange zest, almond essence and beat until it become creamy.
  4. Now beat 1 more egg in it.
  5. Now mix strained baking powder and flour nicely.
  6. Then put this mixture on baking tray on little little with the help of spoon, and keep one one almond on it and bake it for 15 to 20 minutes until golden.
  7. In end keep it on wire rack for cool and then serve it.
