Special Kabab, Uzbek Rice And Beef Papper Mushroom by Chef Zakir

Ingredients for Special Kabab:

  • Mutton mince 1/2 kg
  • Onion 1
  • All spice powder 1 tsp
  • Green chillies 3-4
  • Boiled red chillies 3-4
  • Gram flour 1 tbsp
  • Cumin seeds 1 tsp
  • Coriander leaves 2 tbsp
  • Pure ghee 1-1/2 tsp
  • Desiccated coconut 1 tbsp
  • Lemon juice 1 tbsp
  • Raw papaya paste 1 tbsp
  • Garlic 3-4 cloves
  • Ginger 1/2 inch
  • Yogurt 125 gm
  • Mayonnaise 1/2 cup
  • Salt to taste
  • Chilli powder 1/2 tsp
  • All spice powder 1/2 tsp

Method:

  1. Firstly, grind mince, raw papaya paste and boiled red chillies in chopper.
  2. Then add 1 tsp all spice powder, gram flour, desiccated coconut, salt, lemon juice, cumin seeds, coriander leaves, green chillies, ginger and garlic and grind well.
  3. When all ingredients are grinded, take out and make small and long kebabs.
  4. Heat 1/4 cup oil, fry kebabs slightly and keep in separate pan.
  5. Then mix yogurt, mayonnaise, chilli powder, 1/2 tsp all spice powder and salt in it.
  6. When paste is ready, put on kebabs with help of spoon, add 1/4 cup water, cover it and leave for simmer.
  7. After 6 to 8 minutes, remove cover, cook on high flame until water dries and serve it.

Ingredients for Uzbek Rice:

  • Rice 300 gm
  • Chicken breast 2
  • Cinnamon 1-2 sticks
  • Cloves 6-8
  • Green cardamom 6-8
  • Green olives 8-10
  • Cashew nut 25 gm
  • Almonds 25 gm
  • Pistachio 25 gm
  • Walnut chopped 25 gm
  • Raisins 25 gm
  • Garlic chopped 4 cloves
  • Ginger chopped 1 inch piece
  • Chopped red chilli 1 tsp
  • Salt to taste
  • Oil 3-4 tbsp

Method:

  • Firstly, heat oil and fry ginger and garlic.
  • Now add chicken breast cubes and fry for 3 to 4 minutes.
  • Then add olives, cloves, cardamom, salt, chopped red chilli and 1/2 cup water, cover it and leave for cook.
  • After 8-10 minutes, add cashew nuts, almonds, pistachio, walnuts and raisins, cook more and close the stove.
  • Now in separate pan, heat water and boil rice with some salt. When it remains 1/4 boil, strain it.
  • Now put half quantity of rice in this pan. Put cooked chicken and spread it.
  • Then put remaining rice, cover it, simmer it for 6 to 8 minutes and serve it.

Ingredients for Beef Papper Mushroom:

  • Beef undercut 1/2 kg
  • Button mushrooms 6
  • Onion 1
  • Spring onion 2
  • Fresh cream 2 tbsp
  • Ginger garlic paste 1 tbsp
  • Worcester sauce 2 tbsp
  • Flour 2 tbsp
  • Crushed red pepper 1 tsp
  • Crushed black pepper 1 tsp
  • Salt to taste
  • Oil 3-4 tbsp
  • Oil for fry
  • Flour 2 tbsp

Method:

  1. Firstly, cut undercut beef into slices, coat with salt, black pepper, ginger garlic paste and flour and keep aside.
  2. Now in one pan, heat oil and fry onion until light golden.
  3. Then add crushed red pepper, crushed black pepper, spring onion, salt, fresh cream, worcester sauce and mushrooms slice, roast for 1 to 2 minutes and then add 1/2 cup water.
  4. When water starts cooking, add flour, make it thick and serve.
