Malai Chicken Boti, Roti Ki Rabri And Lachay Dar Doodh Paratha by Chef Gulzar

Ingredients for Malai Chicken Boti:

  • Chicken boneless 300 gm
  • Yogurt 1/2 cup
  • Cream 1/2 cup
  • Green chili paste 2 tbsp
  • Cumin powder 1/2 tsp
  • All spice powder 1/2 tsp
  • Oil 2-3 tbsp
  • Salt 2-3 tbsp

For garnishing

  • Tomatoes 3-4
  • Slices onion 3-4
  • Lemon4-5
  • Salad leaves 5-6

Method:

  1. Cut the chicken into square pieces.
  2. Then put yogurt, cream, green chili paste, cumin powder, chopped black pepper, all spice powder, oil and salt into mixing bowl and mix nicely.
  3. Now put the chicken pieces in skewers and steam them on coals on low flame or bake it and give smoke of coal.
  4. Garnish with salad leaves, tomatoes, lemons and onion.
  5. Serve Malai Chicken Boti.

Ingredients for Roti Ki Rabri:

  • Bread 3-4
  • Milk 1 kg
  • Khoya 250 gm
  • Sugar  250 gm
  • Pistachio 1/2 cup
  • Cardamom powder 1 tsp
  • Corn flour 2 tbsp
  • Silver paper to garnish
  • Kewra essence Few drops

Method:

  1. Break the roti into small small pieces.
  2. Now put the pieces into milk and cook it until bread dissolves in milk.
  3. Then add khoya, sugar, cardamom powder and pistachio and cook it till the khoya and sugar dissolves.
  4. When both things are dissolved, then add water and cornflour slowly.
  5. When it becomes thick, add some drops of khewra and mix it.
  6. Then put it into pot and place it for cooling, garnish with silver paper and serve it.

Ingredients for Lachay Dar Doodh Paratha:

  • Wheat Flour 250 gm
  • White Flour 250 gm
  • Milk 1 cup
  • Butter 2-3 tbsp
  • Clarified Butter to fry
  • Salt to taste

Method:

  1. Add butter and salt in flour, mix it and knead with milk.
  2. Make portions of it.
  3. Roll it long with hand and make portions.
  4. Now put butter on tawa, roll out the portions and fry it.
  5. Serve it hot.
