Singaporean Rice by Chef Samina

Ingredients:

  • Chicken boneless 500 gm
  • Boiled rice 750 gm
  • Chicken stock 1 cup
  • Pineapple 1 cup
  • Mix vegetables 2 cup (Carrot, Cabbage, Capsicum)
  • Boiled noodles as required
  • Green onion as required
  • Chicken powder 1 tbsp
  • Mustard powder 1 tsp
  • Salt to taste
  • Black pepper 1 tsp
  • Corn flour 1 tbsp

For Sauce:

  • Crushed garlic 1 tbsp
  • Chilli garlic sauce 1 cup
  • Talhar chilli paste 1 tbsp
  • Vinegar 1 tbsp
  • Oil 2-3 tbsp
  • Sugar 1 tbsp

For Garnish:

  • Green chilli 6-8
  • Crushed garlic 2 tbsp
  • Mayonnaise 3/4 cup
  • Chilli garlic sauce 1/2 cup

Method:

  1. Put salt, mustard powder, black pepper and oil in chicken.
  2. Fry all vegetables.
  3. Cook chicken until tender.
  4. Heat oil and fry garlic. Then add talhar chilli paste, chilli garlic sauce, vinegar, sugar and chicken stock and cook it.
  5. When thick, dissolve corn flour in water and put in it.
  6. Boil rice with salt.
  7. Also boil noodles and put oil in it.
  8. Also mix mayonnaise and chilli garlic sauce nicely.
  9. Firstly, make layer of rice in serving dish. Make layer on noodles in center and put sauce.
  10. Add mayonnaise mixture and put noodles and rice.
  11. Put chicken, vegetables, sauce and mayonnaise sauce.
  12. In end, add crushed garlic and fried green chilli and serve.
