Jam Bars, Chicken Perri Peri Bites And Peri Peri Rice by Zarnak Sidhwa

Ingredients for Jam Bars:

  • Flour 1 cup
  • Baking powder 1 tsp
  • Cold butter 1/2 cup
  • Egg 1
  • Milk 1 tbsp
  • Jam 1/3 cup

For Topping:

  • Egg 1
  • Sugar 1 cup
  • Butter 1 tbsp
  • Flaked coconut  2 cups

Method:

  1. Mix flour and baking powder, cut in butter cubes and rub till mixture resembles breadcrumbs.
  2. Mix in egg and milk, stir.
  3. Press into a greased 9" square baking tin, bake at 180 degrees C for 15 minutes, or till lightly browned.
  4. Spread jam over crust, mix topping ingredients, butter, egg and sugar and mix in flaked coconut and bake at 180 degrees C for 25 minutes, or till light brown, cut in squares whilst still warm n serve.

Ingredients for Chicken Perri Peri Bites:

  • Button red chilies 12- 15
  • Dry red chilies 10-15
  • Vinegar 1/4 cup
  • Lemon 1
  • Olive oil 5 tbsp
  • Red chilies 4 tbsp
  • Garlic 2 tbsp
  • Salt 1 tsp
  • Boneless chicken 1/2 kg
  • Oil 2-3 tbsp

Method:

  1. Soak the button red chilies and dry chilies in water for a few hours or overnight.
  2. Blend till thick and pasty.
  3. Mix together all the other ingredients in a small bowl.
  4. The spices will not dissolve but will be suspended in the oil. When using, keep peri peri well mixed.
  5. Can be used as a marinate or a dipping sauce.
  6. Method for peri peri chicken: Dip the chicken cubes in the marinate and let stand for a few hours in fridge.
  7. Heat oil, add chicken and cook till done.

Ingredients for  Peri Peri Rice:

  • Rice, boiled 2 cups
  • Oil 2 tbsp
  • Capsicum 1
  • Tomato 1
  • Soya sauce 1 tbsp
  • Peri peri sauce 1 tbsp

Method:

  1. Heat toil, add rice and sauce, add in capsicum and tomato cubes saute, add in soya sauce, peri peri sauce and mix well and serve with peri peri chicken.
