Lasagna, Rainbow Jelly Dessert And Potato Waffles by Zarnak Sidhwa

Ingredients for Lasagna:

  • Lasagna sheets 1 packet
  • Parsley chopped few leaves
  • Ketchup to decorate
  • Oregano 1 tsp

For Meat Sauce:

  • Oil 2 tbsp
  • Mince 1/2 kg
  • Flour 2 tbsp
  • Water 1 cup
  • Tomatoes  4
  • Onions 2
  • Garlic crushed 2 cloves
  • Red chilies 1 tsp
  • Tomato puree 4 tbsp
  • Capsicum 1
  • Mushrooms 4-5
  • Sugar 1 tsp
  • Salt to taste
  • Black pepper to taste

For White Sauce:

  • Butter 2 oz
  • Flour 2 oz
  • Milk 2 cups
  • Chicken cube 1
  • Mustard 1 tsp
  • Black pepper 1 tsp
  • Cheddar cheese 6 oz
  • Mozzarella cheese 6 oz

Method:

  1. For the meat sauce: Heat oil, add mince and cool till brown.
  2. Add flour sand saute; add tomatoes, onions, ginger, tomato puree, crushed red chilies, sugar, salt , pepper and water and cook till mince is done.
  3. Five minutes before removing from fire, add mushrooms and capsicums.
  4. For the white sauce: Melt butter, add in flour, chicken cube, mustard, pepper and remove from fire and add milk, let cook and whisk till smooth and thick.
  5. In a large deep greased dish, layer lasagna sheets, earlier boiled in salted water and drained.
  6. Pour half of the meat sauce and put lasagna sheets again, white sauce, sprinkle half of the cheese and keep layering till the top of the dish.
  7. Lastly add remaining cheese, sprinkle oregano.
  8. Bake at 180 degree C for 30-40 minutes or till the cheese is melted and golden.
  9. Decorate with ketchup and chopped parsley and serve.

Ingredients for Potato Waffles:

  • Butter 2 tbsp
  • Onion chopped 1 small
  • Minced garlic 1 tbsp
  • Mashed potatoes 2 cups
  • Flour 1/4 cup
  • Eggs 2
  • Salt 1/4 tsp
  • Black pepper 1/4 tsp

Method:

  1. Melt butter, add onion and garlic and saute.
  2. Preheat a waffle iron.
  3. Combine onion mixture, mashed potatoes, flour, eggs, salt, and black pepper in a large bowl until well blended.
  4. Scoop 1/2 cup batter into the center of waffle iron and close lid.
  5. Cook until golden brown, 3 to 5 minutes.
  6. Serve with any meat or chicken dish.

Ingredients for Rainbow Jelly Dessert:

  • Mango flavored jelly 1 packet
  • Raspberry flavored jelly 1 packet
  • Banana flavored jelly 1 packet
  • Mixed fruit flavored jelly 1 packet
  • Orange flavored jelly 1 packet
  • Pineapple flavored jelly 1 packet
  • Strawberry flavored jelly 1 packet
  • Boiling water 7 cups
  • Evaporated milk 1-1/2 cups
  • Gelatin powder 2 tbsp

Method:

  1. In a separate bowls mix the mango, lemon, orange, Raspberry, banana, pineapple and strawberry flavored jellies with 1 cup boiling water and let each cool to room  temperature.
  2. Set in a large glass bowl, a loaf tin or individual bowls.
  3. Let each layer cool before adding the next one.
  4. When set and chilled, pour over evaporated milk mixed with gelatin earlier dissolved.
  5. Chill again and serve cut in slices or form in individual molds.
