Grilled Tabana Fish, Chicken Ball In Red Sauce And Avocado Chicken by Chef Zakir

Ingredients for Avocado Chicken:

  • Chicken breast  2
  • Butter 2 tbsp
  • Spring onion 1
  • Garlic chopped 2-3 cloves
  • Flour 1 tbsp
  • Avocado green 1
  • Lemon juice 2-3 tbsp
  • Lemon skin 1/2 tsp
  • Milk 1/2 tsp
  • Cream cheese 2-3 tbsp
  • Salt to taste
  • Crushed black pepper 1/2 tsp

Method:

  1. Firstly, cut chicken breast into strips.
  2. Now heat butter in karahi pan, add chopped garlic, spring onion and chicken and fry until it is cooked well.
  3. Then add lemon skin, flour, salt and chopped black pepper and cook more for 2 to 3 minutes.
  4. Now add milk and cream cheese and cook more for 3 to 4 minutes.
  5. When sauce becomes thick, turn off the stove and keep it aside.
  6. Now cut avocado one to two, take out its seeds from center, peel it and sprinkle lemon juice.
  7. Now cut into slices, put on platter, put chicken in center and serve.

Ingredients for Chicken Ball In Red Sauce:

  • Chicken mince 1/2 kg
  • Milk 1 cup
  • Bread crumbs 4 tbsp
  • Butter 2 tbsp
  • Oil 1/4 cup
  • Button mushroom 1/2 cup
  • Flour 3 tbsp
  • Chicken stock 1 cup
  • Red grapes juice 1/2 cup
  • Boiled chopped tomatoes 3                     
  • Tomato paste 2 tbsp
  • Parsley chopped 1/4 bunch
  • Spring onion chopped 2
  • Chili powder 1 tsp
  • Boiled spaghetti 1/2 packet
  • Salt to taste
  • Black pepper powder 1/4 tsp
  • Coriander leaves 1 tbsp

Method:

  1. Firstly, add chicken mince, bread crumbs, milk and salt in chopper and chop it nicely, take out, make small balls and keep it aside.
  2. Now add butter and oil in one pan and fry the balls slightly. When color changes, take out and keep it aside.
  3. Now add flour in this karahi pan and roast for 2 minutes. When fragrance comes, then add chicken stock and mushrooms.
  4. After cooking 1 to 2 minutes, add red grapes juice, tomato paste and chopped parsley, cover it and cook for 2 to 3 minutes.
  5. Then add fried chicken balls in it. Together ass chopped green chilies, chopped red chili, salt and chopped black pepper, cover it and simmer it
  6. Now boil spaghetti in hot water.
  7. Then add  red sauce in it, mix it on high flame, take out and serve.

Ingredients for Grilled Tabana Fish:

  • Whole fish 1
  • Ginger garlic paste 2 tbsp
  • Onion ground 1
  • Fresh red chillies ground 2-3
  • Tomato paste 2 tbsp
  • Spring onion chopped 1
  • Lemon juice 2 tbsp
  • Oil 2-3 tbsp
  • Crushed black pepper 1 tsp
  • Crushed red pepper 1 tbsp
  • Turmeric 1 tsp
  • Salt to taste
  • White pepper 1/4 tsp
  • Black pepper powder 1/4 tsp

Method:

  1. Firstly, wash fish nicely and mark cut.
  2. Add chopped pepper, onion ground, ginger garlic paste, lemon juice, chopped red chili, chopped black pepper, turmeric, chopped white pepper, black pepper powder and salt in bowl and make marination nicely.
  3. Then add tomato paste. When marination is ready, then spread paste on fish nicely.
  4. Now cover fish with aluminum foil. Grill on coals.
  5. When it is grilled from both sides, take out in platters and serve with lemon juice and season salad.
