Chana Pulao, Firni Kundiyoon Wali And Doodh Dulari by Chef Gulzar

Ingredients for Chana Pulao:

  • Chick peas 1/2 kg
  • Rice 1/2 kg
  • Yogurt 1 cup
  • Onion 1
  • Ginger garlic paste 2 tbsp
  • Pulao masala 2 tbsp
  • Chicken cubes 2
  • Fried onion 1
  • Oil 4-5 tbsp
  • Salt to taste

Method:

  1. Wash rice and soak for 2 hours.
  2. Now heat oil, fry onion, add ginger garlic paste and roast it.
  3. Then add pulao masala in yogurt, mix it nicely and cook it.
  4. Now add chick peas and mix it.
  5. Then add soaked rice, chicken cubes and water as required and cook until rice becomes ready.
  6. After that, simmer it .
  7. When the simmer is done, take out in dish, garnish with fried onions and serve.

Ingredients for Firni Kundiyoon Wali:

  • Milk 1/2 kg
  • Rice 1/2 cup
  • Khoya 1/2 cup
  • Sugar 2 cups
  • Cardamom powder 1/2 tsp
  • Kewra essence few drops
  • Silver paper as required
  • Miti ki kundiyaan 1

Method:

  1. Firstly, soak rice in 125 gm milk and blend in one mixing bowl.
  2. Now put sugar and remaining milk in one pan and dissolve sugar.
  3. Now add milk rice paste in it.
  4. Together add cardamom powder and khoya and cook it nicely.
  5. When mixture becomes thick, add few drops of kewra essence and mix it.
  6. Soak miti ki kundiyaan in water and put mixture.
  7. Leave for chill.
  8. Garnish with silver paper and serve.

Ingredients for Doodh Dulari:

  • Milk 1/2 kg
  • Sugar 1/2 cup
  • Condensed milk 1/2 cup
  • Corn flour 1 tbsp
  • Cream 1/2 cup
  • Fruit cocktail 1/2 cup
  • Dry fruits 1/2 cup

Method:

  1. Cook milk and sugar until sugar is dissolved.
  2. Now add condensed milk and mix it.
  3. Then dissolve corn flour in water, add in it and mix well.
  4. When it becomes thick, add fruit cocktail, mix it, remove from stove and chill it.
  5. Then put cream and dry fruit and serve.
