Daal, Keema Bhari Mirchain, Tarkay Walay Chawal, Achaar, Kachomar And Lehsan Ka Raita by Rida Aftab

Ingredients for Daal:

  • 125 Grams yellow lentils
  • 125 Grams black lentils
  • 1 small onion
  • 6 green chilies
  • 1 cup tamarind juice
  • 1/2 bunch fresh coriander
  • 1 tsp salt  
  • 1 tsp hot spices powder
  • 1 tbsp garlic paste
  • 2 tsp red chili powder
  • 1/2 tsp turmeric powder

For Tarka

  • 8 whole red chilies
  • 8 curry leaves
  • 1/2 cup oil
  • 2 tsp cumin seeds

Method:

  1. First wash the yellow lentils and black lentils.
  2. Then pour it with water, salt, turmeric, chopped red chili, chopped onion, chopped garlic paste and cook it on low temperature.
  3. When the lentils are tendered, beat it and add tamarind juice, green chilies, green coriander, garam masala and turn off the stove.
  4. After that pour oil in a pan add whole round chilies, curry leaves, cumin fry them all, give tarka to it.
  5. Delicious daal is ready to eat.

Ingredients for Keema Bhari Mirchain:

  • 10 German chilies
  • 1 cup mince meat
  • 1/2 cup tamarind juice
  • 1/2 cup oil
  • 1 tsp crushed garlic
  • 1 tsp mustard seeds
  • 1 tsp fennel seeds
  • 1 tbsp chaat masala

Method:

  1. Add tamarind juice, chopped red chili, turmeric, mustard seeds, fennel seeds, chaat masala, salt in mince meat, mix it nicely.
  2. Now fill that masala into German chilies.
  3. Then heat the oil, fry it on low temperature for 5 minutes, cover and let it cook.
  4. After 5 minutes keep it on aside, take it out from pan.
  5. Delicious Qeema Bhari Mirchain is ready.

Ingredients for Tarkay Walay Chawal:

  • 1/2 kg rice
  • 1 onion
  • 1 tsp cumin seeds
  • 1 tsp ginger garlic paste
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 4 tbsp oil

Method:

  1. First keep the rice in water.
  2. Now pour oil in a pan, add onions make them brown.
  3. Then add cumin, ginger garlic paste, turmeric and then roast it.
  4. After that add rice, water, salt, and cook it on low temperature.
  5. When the water dries simmer it on 15 minutes.
  6. Delicious tarkay walay chawal is ready.

Ingredients for Achaar:

  • 1/2 kg mix vegetables
  • 6 curry leaves
  • 1/2 cup oil
  • 1 tsp fennel seeds
  • 1 tsp turmeric powder
  • 1 tbsp crushed garlic
  • 1/2 tsp onion seeds
  • 1/2 tsp salt
  • 2 tsp mustard seeds
  • 2 tsp red chili powder

Method:

  1. First, boil water and add mustard seeds, onion seeds, chopped red chili, fennel seeds, turmeric, salt, curry leaves and chopped garlic.
  2. Now add  cut vegetables and cook on low flame.
  3. When vegetables are tendered, dry its water on high flame and pour oil.
  4. Tasty achaar is ready.

Ingredients for Kachomar:

  • 2 onions
  • 2 tomatoes
  • 2 green chilies
  • 1 cup mint leaves
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp lemon juice

Method:

  1. First add onion, tomato, green chilies, chopped mint in a bowl.
  2. Now add chopped black pepper, salt, sprinkle lemon juice.
  3. Tasty kachomar is ready.

Ingredients for Lehsan Ka Raita:

  • 250 grams yogurt
  • 4 cloves of water
  • 1/2 cup water
  • 1 tsp sauteed cumin
  • 1 tbsp green chili paste
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp oil

Method:

  1. First add yogurt, water, salt, chopped cumin, black pepper, chopped green chili paste beat them all.
  2. Now pour oil and heat it add garlic and saute it.
  3. When it starts to smell add yogurt mixture.
  4. Lehsan ka raita is ready.
