Chocolate Muffins, Corn & Tomato Rice And Fish Balls In Cheese Sauce by Chef Zakir

Ingredients for Chocolate Muffins:

  • Eggs 6
  • Cooking chocolate 150 gm
  • Baking powder 15 gm
  • Cocoa powder 50 gm
  • Plain flour 125 gm
  • Sugar 150 gm
  • Vanilla essence few drops

Method:

  1. First mix the eggs in a bowl.
  2. Now put sugar, baking powder.
  3. Now mix it well add flour, put cocoa powder along flour.
  4. When the cocoa powder is saturated then add few drops of vanilla essence and put this mixture into mold.
  5. Then bake it in oven for 180 degree C for 15 minutes.
  6. When the sponge becomes ready then take it out from oven and keep it in a room temperature for cooling.
  7. For topping melt the cooking chocolate.
  8. After that take out the muffins from oven.
  9. Then pour the melted chocolate on muffin tray, and inject some melt chocolate in muffins with the help of cringe.

Ingredients for Corn & Tomato Rice:

  • Rice 300 gm
  • Salt  to taste
  • Garlic boiled 1 tbsp
  • Tomatoes boiled 3
  • Chicken stock 1-1/2 glass
  • Corn 1 cup
  • Crushed black pepper 1 tsp
  • Peas boiled 1/2 cup
  • Spring onion 2-3
  • Oregano 1/2 tsp
  • Oil 3-4 tbsp

Method:

  1. First pour oil in a pan, add ginger paste, cook it for 1 to 2 minute.
  2. Then add cornflour, boiled peas, boiled tomatoes, green onion, oregano cook it for 2 minutes.
  3. Then add stock, salt, chopped black pepper.
  4. When it starts to cook mix the rice.
  5. When the rice starts to comes up cover it for 8 to 10 minutes then simmer it.
  6. Delicious corn and tomato rice is ready.

Ingredients for Fish Balls In Cheese Sauce:

  • Fish fillet 1/2 kg
  • Salt to taste
  • Garlic paste 1 tsp
  • Chinese salt 1 tsp
  • White pepper 1/2 tsp
  • Black pepper 1/2 tsp
  • Bread crumbs 4-5 tbsp
  • Spring onion 1
  • Green chillies 2-3
  • Egg 1
  • Oil for fry
  • Oil 2 tbsp
  • Chicken stock 1/2 cup
  • Salt to taste
  • Flour 2 tbsp
  • Mustard paste 1/2 tsp
  • Crushed black pepper 1 tsp
  • Cheddar cheese 100 gm
  • Oil 2 tbsp

Method:

  1. First put the fish fillet add salt, garlic paste, Chinese salt, chopped white pepper, chopped black pepper, bread crumbs, green onion, green chilies, egg, chop it nicely.
  2. Now add balls in it, pour oil, deep fry it and keep it on a side.
  3. Then pour oil in a separate pan, add flour, roast it nicely.
  4. Now add chicken stock and mix it well.
  5. When the sauce becomes thick add black pepper, mustard paste, cheese mix it nicely.
  6. Put the fried balls and mix it well, then serve.
