Rus Malai, Shahi Zarda And Lal Laddo Ka Halwa by Chef Gulzar

Ingredients for Rus Malai:

  • Dry milk  2 cups
  • Fresh milk  1 kg
  • Khoya  250 gm
  • Eggs  2 cups
  • Sugar  1 tsp
  • Cardamom powder  1 tsp
  • Baking powder  1 tsp
  • Flour  2 tbsp
  • Oil  2 tbsp
  • Kewra essence  few drops
  • Almonds/ pistachio  1/2 cup

Method:

  1. First, put milk and sugar in pan and boil it.
  2. When sugar is dissolved, put coconut and kewra essence, mix and cook well.
  3. Put milk, oil, flour, chopped cardamom and baking powder and mix it well.
  4. Add beaten eggs and stir it..
  5. Now make portions of this mixture, add milk and leave for few minutes.
  6. When portions starts comes up, garnish with almonds and pistachios, chill it and serve.

Ingredients for Shahi Zarda:

  • Rice  1/2 kg
  • Sugar  1 cup
  • Kewra essence  few drops
  • Small cardamom  4-5
  • Khoya  1/2 cup
  • Dry fruits  1/2 cup
  • Yellow food color  a pinch
  • Green food color  a pinch
  • Coconut  1/2 cup
  • Silver paper  as required
  • Muraba  as required
  • Clarified butter 1 cup

Method:

  1. First, wash rice and soak it.
  2. Then put kewra essence with rice and boil it 1/4th.
  3. Now heat oil in a pan, put hot ghee and small cardamom and make them crispy.
  4. Then add water and sugar and cook.
  5. When sugar is dissolved, add rice and coconut and mix it.
  6. Now make 3 pieces of rice and put separate food color individually.
  7. Add khoya and dry fruit. After that, simmer it.
  8. When simmer is done, take out in dish, garnish with silver paper and serve.
