Kuku, Khorshat Fesenjan And Torshi-makhloot by Chef Gulzar

Ingredients For Kuku:

  • Boiled spinach 1 cup
  • Tomato chopped 2
  • Chopped garlic 2 to 3 cloves
  • Onion chopped 1
  • Black pepper crushed 1 tsp
  • Cumin crushed 1 tsp
  • Turmeric powder 1/2 tsp
  • Crushed coriander 1/2 tsp
  • Egg 3-4
  • Grated mozzarella cheese 1 cup
  • Parsley 1/2 bunch
  • Oil  1/2 cup
  • Salt to taste

Method:

  1. Pour oil in a pan, add chopped garlic, onions for frying.
  2. Then put the spinach, chopped black pepper, chopped cumin, chopped turmeric, chopped coriander, salt and tomatoes mix it.
  3. Now add beaten eggs, pour oil and spread the mixture.
  4. Cook it from both sides.
  5. In the end put the grated mozzarella cheese, you can serve it as well.
  6. Or bake it in oven.
  7. Garnish its top with green coriander then serve.

Ingredients For Khorshat Fesenjan:

  • Chicken 1/2 kg
  • Onion 2
  • Ginger garlic paste 2 tbsp
  • Pomegranate juice 1 cup
  • Walnut  50 gm
  • Oil  2 to 3 tbsp
  • Salt to taste

Method:

  1. Pour oil in a pan, put onions, ginger garlic paste for frying.
  2. Now add chicken for frying.
  3. Then add pomegranates juice.
  4. Now add salt, roast it till the chicken tenders.
  5. In the end add walnuts for garnishing.

Ingredients For Torshi- Makhloot:

  • Carrot  2 to 3
  • Cauliflower 1
  • Brinjal  1
  • Cucumber  1
  • Onion  2
  • Green onion  1 bunch
  • Potato  2
  • Black pepper crushed  1 tsp
  • Herbs  1/2 cup
  • Vinegar  as required
  • Salt  to taste

Method:

  1. Cook the brinjal make it soft chop it.
  2. Then add herbs.
  3. Add carrots, cabbage, cucumber, green onion, potatoes Juline.
  4. Now pour vinegar, salt, chopped black pepper, boil it well.
  5. Now mix them all, then add all vegetables in a jar.
  6. When it is needed then take it out for use.
