Balochi Biryani And Khadi Kabab by Chef Gulzar

Ingredients For Balochi Biryani:

  • Mutton  1 kg
  • Flour  400 gm
  • Onion  2
  • Chopped garlic  2 tbsp
  • Black pepper  1 tbsp
  • Turmeric  1 tbsp
  • Cinnamon  4 to 5 tbsp
  • Oil  4 to 5 tbsp
  • Lahori salt  to taste

For Biryani:

  • Rice  500 gm
  • Yogurt  1/2 kg
  • Fried onion  2
  • Ginger garlic paste  2 tbsp
  • Cinnamon  2 to 3
  • Big cardamom  2 to 3
  • Clove  3 to 4
  • Turmeric powder  1 tsp
  • Red chili powder  1 tbsp
  • Green coriander  1/2 bunch
  • Green chilies  few
  • Saffron  1 pinch
  • Clarified butter  1/2 cup
  • Salt  to taste

Method:

  1. Put mutton, onion, garlic, chopped black pepper, chopped turmeric, cinnamon, lahori salt, roast it for 5 to 7 minutes.
  2. Now pour water and cover the pan and close it from its sides.
  3. Give it shape of steam cook it till the mutton tenders.
  4. Then take it out.

For Making rice:

  1. Keep the rice in water for 2 hours, then pour water and add salt, mix them well.
  2. Now add rice, cook it well and filter it.
  3. Rice is ready.

For Making Korma:

  1. Pour oil in a pan, add big cardamom, cinnamon, cloves make it crispy.
  2. Then add ginger garlic paste, for frying.
  3. Now add brown onions, turmeric, chopped red chilies, salt, mix it well and cook it to make the paste, korma is ready.

Mixing Method:

  1. Pour the oil of korma in pan, put half rice, put dum pukht mixture.
  2. Now add green coriander, green chilies, make the onions brown.
  3. Then spread the mince.
  4. Now add rice, green coriander, green chilies, onions.
  5. Now pour water, saffron simmer it on low temperature.
  6. When it is simmered then put them in a serving dish take it out then serve.

Ingredients For Khadi Kabab:

For Khadi:

  • Mutton leg  1
  • Ginger garlic paste  4 tbsp
  • Red chili powder  2 tbsp
  • Vinegar  1/2 cup
  • Dry mango  1 tbsp
  • Tamarind paste  1 cup
  • Salt  to taste

For Filling:

  • Rice  1/2 cup
  • Raisin  1/2 cup
  • Peanuts 1/2 cup
  • Pistachio  1/2 cup
  • Ghee  1/2 cup
  • Salt  to taste

Method:

  1. For making filling: Pour water, sela rice, raisin, pistachio, ghee, salt, cook it well so that the water dries.
  2. Now keep it on a side.
  3. Now making karhi kabab, give cuts to the mutton leg and keep it straight then take out its bone.
  4. Now put ginger garlic paste, chopped red chilies, vinegar, dry mango, salt, mix it well. now put it on a mutton leg.
  5. Then fill all the mixture in its center, tie it with thread.
  6. Now place it in a preheated oven for baking it on 200 degree C or put them in skewers and steam them on coals then fry it.
