Kashmiri Kachy Gosht Ki Biryani And Kashmir Achar by Zubaida Tariq

Ingredients For Kashmiri Kachay Gosht Ki Biryani:

  • Mutton 1 kg
  • Rice  1 kg
  • Yogurt  1 cup
  • Milk  1 cup
  • Clarified butter 1 cup
  • Chopped onion  4
  • Tomatoes  4
  • Cloves  4
  • Lemons  6
  • Green chilies  6
  • Black cardamoms  8
  • Small cardamom  8
  • Mint leaves  1 bunch
  • Yellow food color  1 pinch
  • Peas  1 cup
  • Black cumin  1 tsp
  • White vinegar  1 tbsp
  • Red chili powder  1 tbsp
  • Papaya paste  2 tbsp
  • Ginger garlic paste  1 1/2 tbsp
  • Salt  to taste

Method:

  1. Now put the mutton, chopped papaya, chopped red chili, ginger garlic paste, lemon juice, small cardamom, mint, green chilies, black pepper, tomato, peas, cloves mix it well and leave it for half an hour.
  2. Now heat it on low temperature dry its water and remove it from stove.
  3. Pour oil in a pan, add chopped onion make them golden brown, take it out on a newspaper, pour oil in a pan.
  4. Now take a big pan add rice, mint, green chilies,white vinegar, boil it for making it 2/4th change its water.
  5. Then put rice pour oil, make half layer of rice, pour oil and spread the mutton.
  6. Now put onions on its top then sprinkle on its top.
  7. After that add lemon juice, put another remaining rice.
  8. Now pour milk, pinch of yellow color, along remaining onion, lemon juice, ghee.
  9. Then cover it and keep its temperature high for 5 to 10 minutes.
  10. Then slow down its temperature.
  11. When the steam starts to comes up then serve the biryani with raita or Achaar.

Ingredients For Kashmiri Achar:

  • Cauliflower  2
  • Carrot (sliced)  2
  • Green chilies  10
  • Green beans  10
  • White cumin  1 tbsp
  • Peas  1/2 cup
  • Garlic cloves  15
  • Onion seeds  1 tsp
  • Turmeric  1 tbsp
  • Mustard seeds  6
  • Red chili flakes  1 tbsp
  • Chopped ginger  2 tbsp
  • Salt  to taste
  • Brown sugar  1 tbsp
  • Carom seeds  1 tsp
  • White seeds  1/2 cup
  • Oil  1-1/2 cup
  • Mustard seeds  1 tbsp

Method:

  1. Cut the flower of cauliflower.
  2. Give cut on green chili, green beans pieces.
  3. Now pour water, add white vinegar, cauliflower, carrot slices, green chilies, green beans cook it for 2 to 3 minutes then filter it.
  4. Then add turmeric, chopped red chilies, mustard seeds, salt, chopped cumin mix it well.
  5. After that add mixed vegetables, roast it for 5 minutes, brown sugar.
  6. Sprinkle some carom seeds on its top.
