Thai Fried Rice, Pad Thai, Fried Chicken With Cashew Nuts And Bananas In Coconut Milk by Zarnak Sidhwa

Ingredients For Thai Fried Rice:

  • Cooked rice 4 cups
  • Chicken breast 1
  • Soya sauce 1/2 tbsp
  • Onion chopped 3 tbsp
  • Garlic, minced 3-4 cloves
  • Green chili 1
  • Carrot, chopped 1 small
  • Egg 1
  • Pineapple chunks 1-1/2 cups
  • Peas 1/4 cup
  • Roasted cashews 1/4 cup
  • Fresh coriander for garnish
  • Vegetable oil 2-3 tbsp

Ingredients For Stir Fry Sauce:

  • Pineapple juice 2 tbsp
  • Fish sauce 2 1/2 tbsp
  • Sugar 1/2 tsp
  • Turmeric 1/3 tsp
  • Coriander powder 1/4 tsp
  • Cumin powder 1/4 tsp

Method:

  1. Mix chopped chicken with soya sauce.
  2. Set aside to marinate.
  3. Combine all "Stir-fry Sauce" ingredients together. Set aside.
  4. Heat a wok, add the oil, then add the onion, garlic, chilli and carrot.
  5. Stir-fry 1 minute.
  6. Add marinated chicken and stir-fry until chicken changes color.
  7. Add in the egg and continue stir-frying.
  8. Add the stir-fry sauces.
  9. Also add the cooked rice, pineapple and peas.
  10. Stir fry well and then add the cashew nuts.
  11. Remove from heat and add more fish sauce if required.
  12. Garnish with chopped fresh coriander and serve immediately.

Ingredients For Pad Thai:

  • Thai rice noodles 1 packet
  • Lemon juice 3 tbsp
  • Chicken stock 3 tbsp
  • Chicken breasts 2 boneless
  • Fried tofu 4 oz
  • Peanuts chopped 6 tbsp
  • Fish sauce 2 tbsp
  • Brown sugar 2 tbsp
  • Oil 3 tbsp
  • Garlic chopped 1 tsp
  • Shrimp 4 oz
  • Eggs 2
  • Bean sprouts 2 cups
  • Green onion 2 stems
  • Hot chili sauce 1/2 tsp
  • Red capsicum 1
  • Coriander leaves 1/4 cup
  • Lemon 1

Ingredients for Fried Chicken With Cashew Nuts:

  • Chicken breast 1 kg
  • Oil 3 tbsp
  • Cashew nuts 1/2 cup
  • Onion 1
  • Dry red chillies 6-8
  • Spring onion 3
  • Oyster sauce 2 tbsp
  • Sugar 1 tbsp
  • White pepper 1 tsp
  • Chicken stock 3-4 tbsp
  • Dark soya sauce 1 tbsp
  • Fish sauce 1 tbsp

Method:

  1. Heat oil, stir fry chicken.
  2. Remove from wok when done and set aside.
  3. In same wok, add very little oil and stir fry the cashews, onion, dried red chilies, spring onions, add chicken stock, oyster sauce, soya sauce, add chicken again and season with sugar, white pepper powder and fish sauce.

Bananas In Coconut Milk:

  • Coconut milk 400 gm
  • Sugar  2 tbsp
  • Salt  a pinch
  • Bananas 6

Method:

  1. Heat coconut milk on low flame, add in salt and sugar.
  2. Slice bananas in 1'' slices and slowly add them to the coconut milk and boil for 5 minutes.
  3. Serve warm.
