Karela Aloo Bhujia, Khara Masala Mash Keema And Thandai by Chef Gulzar

Ingredients For Khara Masala Mash Keema:

  • Chicken mince  1/2 kg
  • White lentil  250 gm
  • Chopped garlic  4 to 5 cloves
  • Chopped onion  2
  • Whole black pepper 1 tsp
  • Whole cumin  1 tsp
  • Big cardamom  3 to 4
  • Cinnamon 2 to 3 sticks
  • Clove  4 to 5
  • Bay leaves 2 to 3
  • Crushed red chili  1 tbsp
  • Green chilies  5 to 6
  • Green coriander  1/2 bunch
  • Sliced ginger  1 inch
  • Oil  4 to 5 tbsp
  • Salt  to taste

Method:

  1. First clean the white lentils and wash it keep it in water for half an hour.
  2. Then pour oil add whole black cumin, chopped cumin, big cardamom, cloves, curry leaves make it crispy.
  3. Then add chopped onions, chopped garlic fry them.
  4. When the onions becomes brown then roast it.
  5. Then add chopped red chilies, green chilies, mix it well then roast.
  6. When the lentil is tendered then add green coriander keep it for simmer.
  7. When the simmer is done then add ginger slices, green coriander for garnishing then serve.

Ingredients For Kerela Aloo Bhujia:

  • Bitter gourd  1/2 kg
  • Potato   2  to 3
  • Ginger garlic paste 1 tbsp
  • Onion  1
  • Turmeric powder  1 tsp
  • Red chili powder  1 tbsp
  • Black pepper  1/2 tsp

Method:

  1. First chop the bitter gourd, add salt, wash them after hours and make it dry.
  2. Then fry it lightly, now add potato slices for frying and keep it on a side.
  3. Then pour oil in a pan, add onions for frying.
  4. Now add ginger garlic paste for roasting.
  5. Then add chopped turmeric, chopped red chilies, chopped black pepper, salt, green chilies for frying add potato simmer it on 10 to 15 minutes.
  6. When the simmer is done then garnish it with green coriander then serve.

Ingredients For Thandai:

  • Almond  25 gm
  • Melon seed  25 gm
  • Black pepper  1 tsp
  • Cardamom  4 to 5
  • Whole cumin  1 pinch
  • Poppy seed  1 tsp
  • Sesame seed  4 tbsp
  • Sugar  as required
  • Ice  as required

Method:

  1. First put the almonds, melon seeds, brain, whole black pepper, cardamom, whole cumin, poppy seeds, sesame seed, fold it in muslin cloth make a bag of it.
  2. Pour water, when it becomes ready then take it out in a glass add ice in it and mint leaves while serving.
