Ingredients For Shikarpuri Achar:

  • Raw mangoes 2
  • Lemon  4
  • Carrot  2
  • Green chili 10
  • Vinegar  1 cup
  • Water  1 cup
  • Whole black pepper 1 tsp
  • Whole coriander  1 tsp
  • Fenugreek seeds powder 2 tbsp
  • Cumin seeds powder 1 tsp
  • Red chili powder  1 tsp
  • Turmeric  2 tsp

Method:

  1. Cut the raw mango, lemon green chilies.
  2. Now boil them in  water put all vegetables.
  3. Then add chopped red chilies, salt, turmeric, chopped ginger, garlic cloves, whole black pepper, whole coriander, fenugreek seeds and chopped cumin.
  4. When they are boiled then turn off the stove.
  5. After that pour oil  and vinegar mix it well then fill it into jar.

Ingredients For Chicken Baked Shashlik:

  • Boneless chicken 1/2 kg
  • Boiled rice 1/2 kg
  • Chopped capsicum in cubes 2
  • Chopped tomatoes in cubes 2
  • Chopped onion in cubes 2
  • Shashlik sticks 6
  • Garlic powder  1 tsp
  • Mustard paste  1 tbsp
  • Black pepper 1/2 tsp
  • Salt  1/2 tsp
  • Lemon juice 2 tbsp
  • Oil  4 tbsp

For making sauce:

  • Mozzarella cheese 1 cup
  • Cheddar cheese 1 cup
  • Stock  1 cup
  • Tomato ketchup 1/2 cup
  • Green chilies  2
  • Red chili powder 1 tsp
  • Sugar  1 tsp
  • Finely chopped garlic 1 tbsp
  • Corn flour 1 tbsp
  • Salt  1/2 tsp
  • Vinegar 2 tbsp
  • Oil  2 tbsp

Method:

  1. Take a boneless chicken add capsicum cubes, onion tomatoes, mustard paste, black pepper, salt, lemon juice, garlic powder leave it for an hour, then steam the shashlik steak on a grill pan.
  2. For sauce, pour oil in a pan add stock.
  3. Along chopped red chilies, green chilies, vinegar, sugar, tomato ketchup 
  4. In the end add corn flour, pour water then turn off the stove.
  5. After that add rice, put steak and sauce.
  6. Put mozzarella cheese, cheddar cheese on its top then bake it on 180 degree C for half hour then serve.
