Ingredients For Pijja Kulcha (Bheega Kulcha):

For Making Kulcha:

  • Flour 2 cups
  • Dough  1 tsp
  • Salt   1/4 tsp
  • Ghee  2 tbsp
  • Luke warm water  as required
  • Sesame seeds  as required

For Making Topping:

  • Boiled grams 1 cup
  • Onion 1
  • Green chilies 2
  • Tamarind chutney 1/2 cup
  • Oil  1 tbsp
  • Red chili 1/2 tsp
  • Salt  1/2 tsp
  • Green coriander  as required

Method:

  1. For making Kulcha take a flour, yeast, salt, ghee and hot water, knead it and leave it for half an hour.
  2. When dough rises then pour oil put it into oven for 20 minutes on 180 degree C Bake it well.
  3. Then take it out from oven pour ghee and fry it well.
  4. For topping pour oil add red chilies, salt add boiled peas cook it for 1 minute.
  5. Now put peas on kulchay. Then add tamarind chutney, onion, green chilies and green coriander then serve.

Ingredients For Brain Katakat:

  • Beef brain  1
  • Onion  250 grams
  • Tomato 250 grams
  • Egg  4
  • Green chili  4
  • Green coriander  1/2 bunch
  • Turmeric 1 tsp
  • Red chili powder  1/2 tsp
  • Salt  1/2 tsp
  • All spice powder 1/2 tsp
  • Cumin seeds  2 tsp
  • Ginger garlic  2 tsp
  • Fenugreek dried leaves 2 tbsp
  • Oil  1/2 cup

Method:

  1. First put the brain in water, wash it and make its pieces.
  2. Now beat the egg nicely.
  3. Pour oil on pan, add tomatoes, dry fenugreek, cumin, turmeric and salt  beat it with help of hammer.
  4. Then add beaten egg, when egg is fried then mix the brain with help of hammer, then turn off the stove.
